My only concern with your unplugging system is that it causes a burst of water shooting out over the sluicebox, which I would worry could wash gold out of the box. To measure the vacuum at the jet entry, I would plumb an orifice at the measurement point, through a valve, to a length of clear or translucent flexible PVC running downward maybe a meter, then up about 3 meters, then down 2 meters into a bucket with some dyed water (water level equal to orifice elevation). Have an air bubble in the upper half loop extending from the dyed water surface for about 4 meters of tube length. When running, the vacuum will pull the bubble toward the power jet, causing the dyed water level to rise in the tube as the jet end of the bubble is pulled down. The height difference between the two levels gives an immediate indication of the vacuum, visible from anywhere near the system. With the density of the water and the height measurement known, one can calculate the actual vacuum. In use, I'd mark the indicator hose with tapes at the levels I've determined to produce the desired vacuum and sluicebox flow, so I could easily set and keep the pumps running to maintain that vacuum. (if the power jet pulls the dyed water up over the top of the air trap, that means the vacuum has exceeded about 0.45 bar) (Based on the work you've shown in your video here, I am certain that you already knew how to do this..
