When backlighting a subject I recommend using Spot metering.
So the meter doesn't underexpose the face. EV or matrix metering has a hard time with this much backlight and the subject is not lit.

Why not just set the Camera to auto ISO and set the Camera for the shot and use exposer compensation.

She is shooting in manual mode.

You get bettee results with manual sometimes. Sometimes auto will pick the highest iso and get grain
