Unfortunately, it turns purple in any drinks that include citrus juice....which is pretty but not blue! ....OK, I watched more of your video. Clearly, you're aware of the color changing pH-issues! And yes, the color changing effect is kind of a fun thing to show off to guests. Cheers!
In my experience Butterfly Pea changes color from citrus and tonic. Does this happen when using the Butterfly Pea in this Liqueur? Hiroyasa Kayama makes Blue Curacoa from Cointreau and a home grown botanical that looked like a blue berry.
Yes, it’s more of a color changing curaçao. You can always add alkaline boost drops to maintain the blue color, but it’s kind of a fun party trick to change from blue to purple or pink. I’ll have to check out that recipe. Sounds interesting.

I just used Blue Spirulina which is natural algae and it totally have a vibrant blue. I haven’t used it for cocktails yet
Is there any other substitute for the butterfly pea?
You can try blue spirulina. I think it’s called blue majik. It does have kind of a fishy taste, so use very sparingly
