- "Kamezawado" in Jimbocho, Tokyo is a long-established Japanese sweets shop founded in 1905. Mr. Hokari, the 4th generation, will start preparing Japanese sweets that are kind to the body with high quality ingredients without using any mixture such as additives from 5:30 in the early morning.
We closely adhered to the manufacturing process of the plump and delicious dorayaki, which has been passed down for 100 years, and the popular and elegant taste of bean daifuku, which is sold out every day.

My father grew up in Japan when he was young. So when I was young, he bought me a lot of Dorayaki.
It reminds me of the past.

I really love how Japanese manage their kitchens. And tools are always clean and the floor always clean and dry.
Doesn't really look like anything special to be honest.
Used to work in an American dinner. It was far from being a fancy place, but the kitchen wasn't too different from this. Most food places with a non braindead management will try to keep their kitchen like this. Its more efficient and reduces chances for employees to get hurt. That means more profit.
Places that look like the kitchens in kitchen nightmares end up closing fast. Its not profitable to have dirty kitchens.

I've never really seen an egg that orange. Ours are more yellow here. Not sure why, or if it's better/worse.
Basically orange yolk means more omega 3 and protein,its potent, special type of chicken. Normal poultry chicken have yellow like most do
Japanese consumers prefer orange yolks, so poultry farmers add paprika powder to their diet to make it darker due to its carotenoids.
