A few years ago I had the best croissants in my life in Southern France. I came accross a little bakery on my way home from a party early in the morning and the smell of freshly baked croissants filled the street. Nerver again has food made me happier!

This video is truly awesome. Now I feel thankful for the bakers who do all the job :D In Finland the butter is added straight with other stuff and there's no yeast and mostly no sugar(f.ex. cheesecroissants). I got nice ideas(and hungry too), keep up the good work !
I would say your work is very fluid & constant, producing very nice results. Reminds me of a East German guy I worked with in my youth, he was also a great all round Baker.

i was once a baker and during that short lived career my favourite was making danish pastry. The science behind it was what made it interesting. The amount of time its kept in cool room to lett he yeast do its work and even the temperature of water made a difference in the finish product. the baker before me who trained me would only let the pastry sit for 4-6 hours. I let it sit over night and the next day after it was all baked it was flakier and more visually appealing than that bakery had ever made

When I saw you making the chocolate croissants I called my mom and told her to watch this video! I went to Paris in 2000 as a graduation present and we were fighting over those!!! We still talk about it; all of my food memories of France are awesome! This is so fascinating to watch- it makes me want to stretch my baking skills and give real croissants a try :)
