- This week we’re back on the beautiful Island of Ischia, just off Naples, where Carmela lives. Her pasta, though, is from her home region of Puglia. We had such fun exploring the area, and if you’re curious, you can check out our adventures over on the Pasta Grannies Club (link below). Carmela’s vegetable garden was something else - the produce was next level. She has a lot of customers who can confirm this. She’s all about that homegrown goodness, and it really makes a difference. This is her recipe:
For the sauce
1 onion
2 tablespoons of extra virgin olive oil
750ml passata
salt
For the dough
300g durum wheat flour
a pinch of salt
150ml warm water
some pecorino cheese, or cacioricotta, to serve.

I love her cheeky little smile as she puts the basil on the finished dish. Are there a lot of 'doorstop farmers' on her street? I find the whole concept fascinating.

My grandmother immigrated to the USA from the Abruzzo region. Her cavatelli recipe uses eggs & ricotta. Most recipes do not. But, we always use her recipe on her original machine. I’m now the proud owner of the machine & will always use her recipe! They are so light & delicious.

my Nonni who immigrated to NJ USA and my dad and uncles etc. make this type of pasta with the ferro but its call fusilli or fusidd' in dialect. just water and flour like Carmela. it was always all of us grandchildrens favorite as my Nonna made it every holiday. I have tried to duplicate the taste of her sauce as well and have never been able to.

I cannot imagine why not one manufacturer in Italy has not gotten wise to the fact. That there need to manufacture a tool to make this specific type pasta. All the nonnas have had to use their own resources. Which is brilliant but really where are the Italian manufacturers. 😅😅😅.
She reminds me of my Nonna she had a bit of land when we grew up in France. We would tag along with her to get our vegetables. These were beautiful and brilliant times. Imagine going to the fort and getting those beautiful vegetables. Now that’s organic ❤🍆🥕🥒🥔🍆
you can purchase look for "ferro" or "ferretto" they sell in many Italian specialty kitchen stores and maybe even some mainstream online shops.

How does Carmela keep the famous Ischia rabbits out of her beautiful garden?
hi Christine, hmm, good question. Her veg garden is fenced. Traditionally the rabbits were kept in special burrows from which they couldn't escape; but I haven't investigated whether this still happens, mostly because some viewers get upset with the thought of eating them and so I limit how often we do a video about them! best wishes, Vicky

Yes! I'm Italian, and as a child, this was a treat for me! I'm calling my local butcher to see if I can get some to make at home! P.S. I love Pasta Grannies!
