Jacky Bryant and Jann Lee are my personal favorites.
Jann Lee: Because he's not really a clone of Bruce Lee like most of the others. He's basically a huge fan that began imitiating him to become stronger.
Jacky Bryant: Because his style is basically real Jeet Kune Do instead of the classic Bruce Lee imitation.

i came here to say this. Liu kang is also not a total ripoff, but they didnt really give him his own personality either, he's really the most white bread mk character

He started out as total rip-off, but then it went on and he became a vanilla character with very little personality. It was only after MK9 and on that he received an actual personality.
Honestly, his quotes in MK11 are my personal favorites.

Liu Kang is both jeet kune do and jun fan which is short for jun fan gung fu
