    2 tablespoon peanut oil or olive oil
    800g of small squid
    4 cloves garlic
    1 small onion
    1 medium sized carrot
    1 cup of shredded cabbage
    1/2 cup cornstarch
    2 tbsp rice wine
    300ml crushed tomatoes
    1 cup seafood broth
    1 cup chicharron
    2 tsp squid ink, mixed with 1 tbsp of water
    salt and pepper to taste
    4 tsp of fish sauce
    2 tbsp dark soy sauce
    calamansi, kinchay, parsley to plate

    Read somewhere that using squid ink in food in Spain was a Filipino influence from when the Philippines was under the Spanish crown. Idk about the legitimacy of that info, but I find that really interesting because we often talk about the Spanish influence in Filipino cuisine (and culture in general), but we never hear about the other way around.

      Probably untrue. Squid ink is used in other cuisines too, not just in Phil and Spain. Italy has 'Nero di Seppia' and it's closer to Spain, so one could argue that it's an Italian influence.

    yes you were right, the name of this dish is pancit choca en su tinta, which roughly translates to: squid pancit in it’s ink. it comes from chabacano caviteño, which is a spanish creole that was widely spoken in cavite. now most speakers reside in ternate, and speak chabacano ternateño.

    What I like about pancit is that it has so many different textures and flavors and you would be surprised how they all work. I can imagine the distinct sauce of the squid mixed with seafood broth gives the savory element of the dish mixed into the pancit noodles, the vegetables that cuts the rich flavor topped off with the squid heads and the chicharon that gives you the crispy element. It gives you a symphony of textures and flavor that compliments each other, pretty similar to the general theme of Filipino food.

    Pancit Choca or Choco en su Tinta. Pancit Pusit sa madaling salita. Traditional pansit namin dito sa Cavite particular dito sa Cavite City aside sa Pancit Puso (Puso ng saging na niluto sa suka at asin as sour agent hindi calamansi).

    Travel ka naman minsan dito sa Middle East Erwan, specifically Bahrain. We will introduce you to their local dishes that we Pinoys embraced it since we moved here. We already consider it as our staple food that we can’t leave without, it is actually cheaper than dining in a Filipino restaurant here, not gonna lie but our very own pinoy food is still the best. But is nice to try other dishes and cuisine that satisfy our palate. Cheers!
