Want to learn to knit or need practice? This is a beginner-level Ear Warmer Pattern to try. This uses a 4-ply medium-weight yarn like Patons Canadiana. I used Red Heart Heat Wave, but you can use Red Heart Super Saver and yarns like that as well.
Your goal isn't perfection, but try to be more consistent and get used to the hand movement of knitting.
You will learn a few skills with the tutorial provided, but you can also follow the instructions in the free download.

Knit Stitch Front and Back Increase - kfb
Wrong Side Verses Right Side
Casting Off / Bind Off
Sewing Ends Together Using Whip Stitch
This is sized for adults, I don't have details to change this pattern to kid sizes but patterns online may exist. This is contoured to go over the ears so it's not just a straight headband concept.

I'm an intermediate beginner in crochet and decided 2 days ago to finally learn knitting so went through and watched all your beginner videos. I discovered that the way I naturally wanted to hold needles and yarn matches the continental style (not sure if this a hold over from crochet or perhaps it's the way I Mum tried to teach me so long ago I can't remember), so once I went with that and stopped trying to do it the same way as you do things went much easier and my ear warmer turned out great. I love that everyone seems to have their own ways of doing things, I just keep trying different techniques until I find what works best for me.
I have kinda made this. The increase side is not matching up with the other side. Guess frog and redo. Oh well! Try, try, and try again. Hopefully 3rd time is the charm!
I was comparing my speed to crochet. And that's what deter me. Mikey said this is normal. I thought it was me.
