Quetzals were suprisingly only about 400-500 lbs, so despite them surely being large enough to swallow a human, they would not be able to take off with the extra weight, so they'd much rather skewer you & then peck off what they need from there. Also, don't think they wont actively hunt you as azdarchids (the family of pterosaurs the quetzal belongs to) were rather quick & would definitely find a slow, soft & adequately sized mammal absolutely worth its time.
