I watched this again, why do I torture & aggravate myself being a 59 yr old Irishman ?, I would even pay for the fatty parts of the brisket as it is my fave , like I am addicted lol, 1 other thing being a Jewish kosher deli, I am not sure it is allowed/served but I really like great pastrami with real butter spread on rye in lieu of mustard plus it is great on turkey pastrami for those on a budget or even if they are not on a budget, especially with food prices & the economy these days

Katz's is the best pastrami I've had...but like so many places the WASTE of food is disgusting. Watching him make 1 sandwich he threw away half of the meat. Sure there was some fat, but what a waste. I watch Gorden Ramsey and others waste 50% of their food to make a "perfect" dish. And we then complain about people not being able to afford to eat...
