This looks like what my parents make but we cook it in a day. Why we do is cover the chicken in salt then i think they boil it. After that they add more salt and let it sit for a while. After it finished we brush off the salt and serve it cold because it taste better cold than warm or hit
My mom cooked it this way but she didn't have an oven.She used a wok,and covered the wrapped chicken with coarse salt.She cooked it at low heat on the stove top.it turned out very good.I will try ur method but can u tell me at what temperature u baked the chicken.thks.

I wonder if the type of bird matter. Here in NYC we have frozen chicken that isn’t that fresh and natural like your chicken; will that hinder the results? Do you thing we should buy organic??

I've done this before.But not like this. Instead, did it without wrapping it in parchment paper. Put it into a large stock pot with heated salt rock then placing the bird breast side down and covering it in the heated salt rock. Pat the bird dry then air dry it by stringing it up on a wire clothes hanger for a few hours or until the skin is dry to the touch. Put your favorite seasonings inside the birdbefore cooking and walla Good stuff!

You can use any pot that you have in your kitchen actually. Clay pot just retains heat a bit better. Have a wonderful weekend! ☺️
