My 🇫🇷belle-mère always started dinner with what she called “La bonne soupe.” It was exactly what you just posted, perhaps a bit different depending upon what she had on hand. She had lived through the dreadful German occupation of France in Paris & said her love of turnips occurred because the Germans stole all of the potatoes, so the French people were left with turnips & rutabagas, which the Germans disliked. She was from Auvergne & knew how to make soup from anything available. It was amazingly delicious & I make soup like that to this day. In fact, it was how I got vegetables into my son when he was small because blended soups weren’t so obviously full of veggies.
oh yes please for French onion soup. I love soup, Id have it most days in winter (and then salad for lunch) as its so versatile and adaptable. I cant imagine a soup without my beloved leeks. Generally I like things cut small, I dont like a super heated long dangler of a leek hanging down my chin :) the one currently in the pot has the usual base of leek, onion, carrot, celery, small potato, with smidgen of chilli and then it has cannellini beans, butternut pumpkin and finely chopped cavolo nero and parsley - it all depends on what I have available and often it gets served with a nice dollop of greek yoghurt. Chopped fennel bulb is also lovely as are most pulses. I could never get bored of a good vegetable soup
Back in the 90s I was in France for the first time and I’ll never forget how wonderful the fruits and vegetables tasted there. I was with a group and bought a whole flat of raspberries for us to eat while we were traveling around Calais I have never had a better raspberry Viva la France

I made the soup today on a typical rainy West Coast afternoon. I substituted a red cabbage for the Savoy cabbage because I had a partial head in the fridge and didn’t want to waste it. Delicious! And what a deep, rich colour it turned out to be. I feel healthier just looking at it! Thanks for sharing the recipe, Marie-Anne. ❤️🇨🇦😋

Thanks for this. My wife Is from France. She grew up minutes outside of Nantes. I do all the cooking. I just made this soup and thought of you as I was peeling my carrots with my new ceramic peeler. What a difference that Is hard to imagine compared to a regular one. Highly recommend one for you and anyone else. They peel off just about half as much skin. Peace and truth beautiful people. Here in the South, USA, we prepare vegetable soup by browning cubes of beef then add canned tomatoes, beef broth, carrots, onions, peas, corn, green beans, potatoes(at the last). I love herbs de Provence, salt and pepper. I also add a little bit of barley at the end. We love vegetable soup and I usually can 20-30 quarts a year. I am going to add some turnips and leeks next time. Thank you! ❤
I also make a version of this soup, especially good in our cold Canadian winter (my hubby is from French background.) My son, a vegan, enjoys it when I drop off a mason jar of this soup! Especially good on a day when you want to give your digestive system a rest.
Leeks, celery, some lentils, carrots, 1 small sweet potato, a medium potato, mixed herbs, 2 cloves crushed garlic, chicken stock. Salt & black pepper to taste. Add some flash fried slices of chorizo. I always clean as I go; my kitchen is minute so I have to keep it tidy. I cut it all into even chunks and leave it chunky, so its like veg stew, lovely served with a crust of bread and a bit of cheese grated on top. Yours looks delicious!
So delicious looking. I grew up on a farm where we grew all our own vegetables, and our soups were always chunky. Anything creamed in a blender would have been heavenly, but we had no blender. Now I see every one creaming their soups, and it looks so good. And the nutrition cannot be beat! Am so hungry watching this video. And, oh yes, we add chunky style corn and often tomatoes. Merci Madane Lecoeur. I feel like I am home! Thank you for teaching your style and recipes. My mother's mother taught me how to set up a kitchen and clean while I cook. My grandmother was an excellent cook. This is why I feel I am home! Now, I am cooking for my elderly father who needs good flavor, nutrition and softer foods. Again, thank you for ideas and methods.
To make a more robust, tasty and nutritious soup you can add a pigs trotter to the stock pot and simmer whist the veggies are sothening for about 1 hour , then remove it for another soup (freeze when cold) lots of gelatine is released into the soup which is very good for invalids and poorly patients.

It gives a richer flavor. Sometimes I will put extra carrots, onions etc at the bottom of a roasting pan with a chicken or meat & add those to the soup also. My favourite soups are vegetable lentil, and chicken vegetable. I always puree my soup, no matter what kind it is. I ladle some into a 4-cup glass measuring cup and blend with a stick blender, and then I eat it right out of the measuring cup! (Saves me having to wash another dish!!) It works perfectly since my husband prefers his chunky. I will definitely try making this soup. Thank you! ♥
What a beautiful cabbage! I blend my soups too, it does make it easier I cool down the soup and use a handheld blender. I also use whatever I have in the refrigerator. Thank you for this and a leek tart would be lovely.❤
I love hot soup in winter with cheese melted on toast. I make a big pot and freeze half of it for days when I'm too lazy to cook or didn't have time to shop. I'd love to see more of your recipe, Marie-Anne.

The soup looks delicious!!! I also like to add parsnips (I usually sauté them in a bit of olive oil first) to my vegetable, butternut squash and chicken soups sometimes. For health reasons I don’t often add salt, I find that celery seed (a jarred spice here in the states) gives a salty taste in many savory recipes. I love vegetables and they’re so healthy. Well done 👏 I bought an electric soup maker a few years ago and it’s handy as it cooks and blends all together at the end. It’s also got the option of having it chunky which my husband prefers.I have never used cabbage or turnip in my soup but I must try that. I have not seen those small turnips. I usually sauté the onion in a little olive oil first on a little pan and I add some vegetable bullion powder to my water. Soup is great especially in winter time and some nice fresh bread. I have been to a cookery demonstration by a French chef who made the French onion soup. I personally wouldn’t make it as I’m not a lover of onions.
When I think of vegetable soup I think of a clear broth with cut up vegetables with meat. This was nice because it was pureed. I’m going to make vegetable soup your way. It’s easy and very delicious!

Bonjour Marie-Anne, Soup is one of my favourite foods. It's so versatile. I have never thought to add cabbage to a blended soup, but I will now. All those vegetables are so delicious. I spent a summer in Belgium a long time ago and my host family always began their noon meal with a thick blended soup such as you've prepared. I would love to see you prepare a Leek Tart and French Onion Soup. I agree with you that you can't have a soup without onion! Thank you for sharing your home and kitchen "trucs" with all of us. Just put this on the hob and put in just water instead of a stock cube which I usually do. It will be interesting to see the final dish as I would prefer not to use processed ingredients. Thank you for this ❤

Just put this on the hob and put in just water instead of a stock cube which I usually do. It will be interesting to see the final dish as I would prefer not to use processed ingredients. Thank you for this ❤
