    INGREDIENTS: (Makes 2 onigirazu)
    1 boneless pork chop
    1 egg
    1/2 cup flour
    1/2 cup panko bread crumbs
    salt and pepper
    1 leaf cabbage,washed and dried
    2 sheets nori
    1 1/2 cups cooked japanese rice
    chinese mustard
    tonkatsu sauce
    DIRECTIONS:
    Slice the cabbage into thin strips. Whisk one egg in a bowl. Make slits on the edge of the pork cutlet to prevent shrinkage and curling. Season with salt and pepper. Lightly flour both side with flour. Dip into the beaten egg and cover with lots of panko bread crumbs on both sides. Fry in hot oil and cook until pork is no longer pink on the inside. Drain of excess oil. Cut the pork cutlet in two. Put a sheet of plastic wrap on your work space. Place a sheet of nori on top. Add 1/2 cup of rice onto the center of the nori. Season with salt. Top with some shredded cabbage and some tonkatsu sauce. Put a piece of tonkatsu on top along with some chinese mustard and more tonkatsu sauce. Add some more rice on top and season with salt. Wrap the whole thing up with your nori sheet. Then wrap tightly with the plastic wrap. Repeat with the 2nd onigirazu. Let them rest for at least 10 minutes before cutting in half. Enjoy!

    「おにぎらず」は握らないおにぎり。別に言えば、ご飯のサンドイッチ。
    いろんな具を使ってアイデア無限大。今回はとんかつにしたよ!
    【材料】(2個分)
    ・とんかつ用豚肉 1枚
    ・卵 1個
    ・小麦粉 1/2カップ
    ・パン粉 1/2カップ
    ・塩・コショウ 適量
    ・キャベツの葉 1枚
    ・海苔 2枚
    ・ご飯 1.5合分
    ・カラシ 適量
    ・とんかつソース 適量
    【作り方】
    ・キャベツは芯を取って千切りにします。
    ・広めの器に卵を割ってよく溶きます。白身をよく切ります。
    ・揚げたときに曲がらないように豚肉の脂身と赤身の間に3~5カ所ほど包丁を入れ、筋を切ります。
    ・両面に塩・胡椒をします。
    ・小麦粉を薄くぬります
    ・溶いた卵にくぐらせます。
    ・パン粉をつけます
    ・揚げ物鍋があればそれを、無ければフライパンに油を1cm程引いて170度で途中返しながら5~6分揚げます。
    ・台にラップを敷いて、その上に海苔をのせます。
    ・中央に四角く(海苔の向きと45°ずらす)くご飯を広げます
    ・塩を少々ふり、キャベツをのせます。ソースをかけます。
    ・とんかつをのせます。カラシをぬります。
    ・ソースを掛け、ご飯をのせ、少し塩をふって、海苔でくるみます。
    ・最後にラップでくるんで、海苔が馴染むまでしばらくおきます。

    Guys, I never heard of tonkatsu before. OMG this deep fried cutlet inside the rice sandwich is way more than just clever, it's obviously out of this world delicious! Fantastic job my friends!

    that's so interesting! Tonkatsu is basically the same as our German equivalent "Schnitzel" but it's served entirely different! Over here the standard Schnitzel is served with fries, and a salad (with dressing and maybe even tomatoes, grated carrot etc. on the side). And as a "topping" you will usually get a slice of lemon on the schnitzel to squeeze onto it. There are of course about 100 variations with sauces and other side dishes, but that would be the standard schnitzel-dish.
    I can't wait to be in Japan in a few weeks to experience the differences and similarities of our cultures first hand.

    Thanks for the great recipe! There's a macrobiotic restaurant in LA called M Cafe de Chaya, and they make a very delicious seitan katsu. I've never tried making it myself, but I'm sure the seitan would be delicious in your onigirazu. I'll have to give it a go.

      +Colleen Kubricht if you don't have the sauce, you can simply combine ketchup and worcestershire sauce. It's close enough. :)

    I finally tried it and it was SOO good and a lot easier than I thought :)
    I haven't lived in Japan for years and good/authentic Japanese food in America is hard to find! Don't think I've ever seen Onigirazu in South Florida haha so I'm super happy I can make it myself.

    This looks amazing! I do have a question though, how well do these do if you made a few and store in the fridge for a day or two? I was thinking these would be great for lunch, but I was thinking of making a few so that they're ready to grab and go and I wouldn't have to assemble one every day before work.

      They stay fresh in the refrigerator for a few days at most. Make sure to heat them up before eating though, as the rice will be a bit hard. You could freeze the onigirazu without the nori too. Just make the onigirazu like you would with the plastic wrap but without the nori sheet. Freeze them for later use. Microwave them when you want one and then wrap it up with the nori. I hope this helps.

    Mmmm, looks delicious! I've wanted to try Tonkatsu for ages... I was wondering, what is chinese mustard? I haven't heard of that kind before. It looks very different to English mustard (which is bright yellow and extremely hot and sharp), more like french or dijon mustard. Do you know what the difference is?

      +Kiran Trivedy hmm....not really sure. Chinese mustard is the stuff that they serve in Chinese restaurants. You can also use Japanese mustard which is similar. But if not, I think dijon would work as well.

    looks so good! so what makes onigirazu different from normal onigiri? is it the shape?

      onigirazu means "no need to mold". Onigiri must be molded into shape with hands while the Onigirazu doesn't require you to do that. It's more like a sandwich so you can also put more filling inside.

    I think my pork cutlet was a bit too big because it wouldn't fold tightly at the top. When I unwrapped it after 10 minutes it fell apart :( the tonkatsu was good though!

    Can I make this the night before to eat it for lunch the next day? Do I refrigerate it and heat it up in the microwave or eat it cold?

      +Bluntcookie yes you can make it a day before but it must be kept in the refrigerator. You can microwave it just before eating. However the rice does get a little hard in the refrigerator. Have fun making this!

    Waaaa Shinichi and Tabi this is AMAZING! I can't wait to make it! But I do have a question! If I wanted to pack this and go hiking and put it in a bento box...how do I keep it cool so that I don't die alone in the wilderness of food poisoning? :D

      +KeelyCanVlog it depends on the weather. If it's rather hot, I definitely recommend putting some ice packs in with your bento box. Also adding a bit more salt to the rice will help preserve the onigirazu for a longer period of time. That's what umeboshi(pickled plum) does for bentos. I hope this helps my friend.

      KeelyCanVlog omg you are so funny! Just made me laugh out loud on the train! lol. I don't know if there's actually a right way but we like to put ours on top of the bento box. That way the bento box can lie flat. :)

      A flat bento would be good. It's important to keep those lines symmetrical right? ;) And thank you! I'll be sure to put it on TOP of the bento.....when I buy a bento box. Woops!

      +tornsaeteurn we don't but you can simply mix ketchup with a few dashes of worcestershire sauce. It's not the same, but that's how my mom made it when we ran out. It's good!

      +TabiEats Thanks. I found several variations and the most basic recommendation was ketchup and Worcestershire. Since there were many variations, I made my own using ketchup, Worcestershire sauce, ginger powder, onion powder, garlic powder, pineapple juice, and sugar. And it's pretty darn good!

      These don't keep that long. Perhaps just for one day in a cool place. If you want to make it the day before, you would have to keep it in the refrigerator tightly wrapped with plastic. Then right before you eat it, zap it in the microwave. Hope this helps.

      +Tiffany H yes we did. We only use Japanese rice (sushi rice) as you need the rice to be able to stick together. I hope this helps.
