pete smith I cant take your word for any of it. I do read peer reviewed scientific research all the time and I have never read anything about calcium from dairy causing atherosclerosis. Same goes for the idea that calcium from plant matter being more easily assimilated by the body than that from animal sources.
Sorry but the industrially made cheese is NOT as good as the farmer's cheese. And the fact that it "matures" always in plastic defines it very clearly. Even the guy of the Creamery cheese says that there is a difference.

Think it's safe to say the narrator loves cheese. However, "the longer they're kept, the tastier they will be" is an opinion, not a fact haha :)
