Sausage Seasoned Ribs

Country Sausage Seasoning on a rib is mighty delicious. I've used my sausage seasoning on pork butts but never tried it as a rib rub until now. But let me tell you it's Good!
The perfect blend of peppers, salt, herbs, and a little brown sugar creates a savory bark with a touch of bite that has your taste buds begging for more. What does it for me is the way you taste the meat, then smoke, with the sausage seasoning as a back note bringing those flavors together.
Sausage Seasoned Ribs Recipe
Ingredients:
- 2 racks St. Louis trimmed Spare Ribs
- 1 cup apple cider vinegar
- 1 cup apple juice
- ¼ cup Malcom’s Country Sausage Seasoning - bit.ly/Sausage...
- ¼ cup Sugar in the Raw turbinado sugar
Directions:
1. Prepare smoker for indirect smoking at 275°F using hickory wood for smoke flavor.
2. Combine apple cider vinegar and apple juice and spritz over the outside of each rack of
St. Louis trimmed spare ribs.
3. Combine the Malcom’s Country Sausage Seasoning and sugar in a dredge shaker and apply an even layer
over all sides of the ribs.
4. Place ribs on the smoker and smoke for 2.5 hours spritzing occasionally with the
cider/juice mixture.
5. After 2.5hrs wrap the ribs in butcher paper and return to the smoker for 1.5 hours or until
the internal temperature reaches 204°F.
6. Remove the ribs from the smoker and rest for 15-20 minutes before cutting into
individual pieces.

As a Chicagoan, I have always known the joy of a bucket of rib tips with french fries and some white bread at the bottom to soak up the extra grease and sauce. I can't believe anyone would ever throw away one of the tastiest foods in the world!

In the day we took those liter pop bottles puncehed holes in the cap and sprinkled what ever on the ribs as they cooked...there were peeps living in the neighborhood from N.C. that brought that technique with from back home. My dad though liked to cook ribs fast slowing down on the backend he tied a cotton rag around a wooden spoon to bast the ribs...lotta evolution in the bbq process and that's a good thing most of the time...love these vids man! 👌🏽

Those look really good. I'm on the carnivore diet (not really a "diet" but more of a WOE: Way of eating) so, I don't eat spices anymore except salt. I'm always short on time so, I just take the spare ribs out of the package and put em' right in the smoker (Smoke Daddy vertical pellet grill) with "Perfect Mix" pellets by "Cookin' Pellets and add some extra oak or hickory in the smoke diffuser. I usually smoke several racks at one time and up to twelve so that I have ribs all week. I love them cold with just salt. Can't get enough! But it would be fun to smoke them just like Malcolm does here.

Malcom, my bruthah from anuthah mutha.... i`ve always thought about using some sausage seasoning in the past, never got around to it because i mainly use your KILLER HOGS-THE BBQ RUB all the time. IIn fact, i just bought another case of it from walmart. God bless you man, you are my only BBQ`r i even watch anymore. Pretty much still winter up her in the north east, but it won`t be long, we be gittin them ribs and briskets back into the smokers real soon up here! My biggest problem though is, people smell the BBQ, they start showing up lookin for some!

My favorite part of the pig is the rib tips. Most people simply don't know what they're missing. Some well smoked rib tips are not only incredibly delicious, even more flavorful than the ribs themselves, but they're also far more fun to eat than the ribs. I grew up in the Midwest, and pretty much every good smokehouse serves rib tips. However, ten years ago my family moved to Arizona just outside of Phoenix, and if you even mention rib tips out here, people look at you like you just grew a third eyeball in the center of your forehead. Not a single smokehouse BBQ joint I can find out here serves rib tips, and for the life of me, I can't figure out why. As I said, most people just don't know what they're missing.
I always purchase whole racks of spare ribs when they go on sale, which is quite often. Then I'll trim them to make St. Louis ribs, and then freeze the rib tips until I have enough to fill my smoker. At that point I'll thaw them out and smoke them up all by themselves. Then my teenage son and I will gorge ourselves for two straight days on their fatty, oily, sticky lip smacking porky goodness until we've burn ourselves out.

My son got me a smoker Christmas and I've been trying my best but the ribs never turn out how I want. Anyways, my question is, is using a drip pan filled with apple juice may be my problem?

One thing I learned when I was a chef. Is that the heavier the cook the better the food. And honestly im never disappointed watching Malcolm over here do his thing and show people how to BBR Right and how to cook souther soul food. 🙏 BBQ Brother Malcolm
It's easy to be a "good" chef when you add fat to every meal. Fat is flavor. Making good food without the easy cheats is the mark of a good chef.
Case in point, add butter, bacon grease, bacon crumbles, sausage, and it will taste good. It's that easy.
I take the rib tips and season a big pot of collard greens. Strange, I know, but a sweetheart of a lady from Boston, Ga. taught me this secret & it never fails.

Malcom, I have been watching you for a long time and you've inspired many of my BBQs, including the pork belly candy. I have to say, I went plant-based years ago but I still enjoy you and your videos. I have always been jealous of your array of smokers on the lanai and the fact you do what you love. My son is a butcher (no, there's no conflict between his profession and my lifestyle, I'm proud he does what he loves too) and he loves your vids too. I hope you feed your neighbors other wise it would suck to have to smell your BBQ everyday. Thumbs up!
