- I did a Smoked Fried Turkey - or Smo Fried Turkey. First I brined a whole turkey, smoked it with pecan wood half the way, and then deep fried it in peanut oil for the last step to get a juicy, smoked turkey with a crispy turkey skin.

Smoked and Fried Turkey Recipe
Ingredients:
- 1 Whole Turkey 12lbs
- 1 bottle Malcom’s Bird Brine bit.ly/H2Qbird...
- 2 gallons Water
- 1 can Vegetable Cooking Spray (or your favorite oil)
- 2 Tablespoons Killer Hogs AP Seasoning bit.ly/TheAPRub
- 2 Tablespoons Malcom’s King Craw Seasoning bit.ly/KingCra...
Directions:
1. Remove thawed turkey from packaging be sure to check the cavity and neck area for giblets.
2. Place the turkey in Meat Bag or large container and pour in the bottle of Bird Brine. Add 2 gallons of water (enough to completely submerge the bird) and place in the refrigerator or in a cooler on ice for 24-48 hours.
3. Remove turkey from brine and allow to drain. Place on a wire rack over a sheet pan and place in the refrigerator for 2 hours to dry the skin. (It helps to pat the excess moisture off the skin with paper towel)
4. Prepare pellet grill for indirect smoking at 275°F using pecan pellets.
5. Spray the skin with the cooking spray - or another oil - and season with AP seasoning on all sides.
6. Place the turkey in the smoker breast side up until an internal meat probe hits about 150° F.
7. Set up a turkey fryer for deep frying at 350°F using peanut oil for best flavor. Any clear frying oil will work.
8. Remove the turkey from the smoker and insert the turkey frying rod/hanger through the cavity. 9. Leave the meat probe inserted in the thickest part of the breast to monitor internal temperature while frying.
10. Carefully lower the turkey breast side down into the hot oil. Use extreme caution and follow the turkey fryer directions carefully.
11. When the internal temperature reaches 165°F in the breast, carefully remove the turkey from the hot oil allowing it to drain. Place the turkey immediately on a cutting board breast side up and remove the turkey frying rod/hanger.
12. Season the outer skin with King Craw Cajun Seasoning and let the bird rest for 5-10 minutes before carving.

The Battle for the Soul of Thanksgiving (Smoked vs Deep-Fried) has just reached its only logical armistice...
As a northerner, I feel I missed out big time 😢 we only baked ours….
There are people as we speak... waiting on turkey friers from amazon..
@@OnePieceZoro36 to burn down they house because they didn't listen to Malcolm.
@@It-b-Blair
I live in NY and there’s been several house/
yard fires in my county that fire departments
had to fight because amateurs tried to
deep fry their Thanksgiving turkey. There
must be some success stories for every
epic failure, so some northerners definitely
do it- it’s just unconventional here
@@It-b-Blair all you need is a fryer and peanut oil. Creole butter injection helps too
That time of year again the turkey Malcolm makes is the turkey we make
Ain't no one right way of doin it! This ones another one for the back pocket come turkey day!!!!!!!
Woooooweeee!!!!!!
Never tried frying a Turkey. Awesome video sir!!!
Inspiring!!!!!
Thank you sir!!!!
Malcolm, buddy... That looks outstanding! I've got a 19 lb bird that I'm going to do on Thanksgiving. I don't have a Treager, so I'm going to try and do it on my offset stick burner, and then drop that baby in the oil. I can't wait!!
Lord Reed of Malcom with yet another killer recipe! Looks incredible!
Malcom = Legend.
Big Malcolm love this channel
It's what we're doing today!!! Thank you!! Happy Thanksgiving!!
100% my idol when it come to cooking. You have showed me how to make my bbq alot better! Thank you for all the tips!!!
This man has given me so many ideas and they always deliver.
Nice glad someone had the same idea.. I’ve been smoke frying my turkey twice a year for 5 years now.. the issue I had was the visual aspect after it’s fried because how dark it got but the flavor is amazing and juicy.
That is cooler than anything that has ever been cool before.
Absolutely best way to cook a turkey right here
OMG 😳 I legit JUST typed in the yt search engine 3 days ago: "smoked and fried meats" and of ALL ppl I get to watch one of my fave UA-camrs shed light on this for me!!! 🙌🏽 You don't even know how geeked I am! Tfs!!!
*Pulls out pen and pad
This looks so great, amazing! Thank you for the video, great content! Keep the grind going my friend, your videos are amazing, I would love to see some more shorts for sure though please you’re able to 🙏🙏💪💪🫶
HUGE FAN! You gave me the knowledge and inspiration to start smoking! love your killer hogs rub!!!! all the way out from San Jose CA
A smoked, deep fried turkey video to start November solidifies why Malcom is that dude! His own ab libs during the cooking is hilarious too! 😂😂
Legend says that there are supposed to be blooper reels.... but he never messes up...
Popeyes doesn’t stand a CHANCE! Malcom is the man
The BBQ man of youtube facts!
Malcom this is an awesome video! My plan is to brine, smoked, and deep fry a turkey breast this years. I may add some turkey legs as well but I don't want to do a whole turkey. Thank you for the great videos you always post!
Malcom is the goat 🐐
You gotta be one of the best neighbor on Earth, absolutely delicious looking food 😋 thank you 😊
I've been doing this for years. It's the ultimate turkey. Cool to see you doing it now.
What temp do you pull turkey out from smoker
@@LVGRCCrawlers I don't pull at a temp. I smoke for 2-2 1/2 hours at 275. Then fryer. I check temp until it's done.
That looks awesome Malcom! - Cheers!
Winner Winner Turkey dinner!!
Looks great Malcolm
I'm definitely doing this next year! Try and find a local farm, and if they raise a heritage breed even better. That'll fix the lack of base flavor in the bird. Butterball and those other mass market ones can't hold a candle to the real deal! Once I splurged on a nice bird I couldn't go back.
Well, I didn't realize I wanted a Smoke-I-fried turkey for Thanksgiving until now. Holy crap.
Malcom...great idea smoke then fried....You might have a better result w the char grill big easy oil less fryer....that infrared fryer is amazing and no oil to take away the seasoning
Thanksgiving just got bettah!!
My dad makes a juicy tasty turkey with gravy here in puerto rico, tried most still doesnt compare lol, goes well too with walmart yellow rice with saffron.
Salam kompak selalu ikut menyimak moga sukses selalu 👍 Very nice
I love the challenge of the turkey, practicing on turkeys makes you a better cook. If you can cook a moist tender turkey, you can figure out how to do it all. Cheers.
If you want a really nice turkey fryer check out the bayou classic beer brewing kit. It’s the same thing as the turkey fryer just no safety features.
Wished I was there too
Great 💪💪💪
I don’t cook whole turkey anymore but I will make some legs. I’ve found the best way is to brine, sous vide and finish under high temp in a smoker.
I did this the last 2 years. My favorite part of chicken and turkey is the crispy skin and I got sick of my holiday turkeys having soggy skin. My family now asks if I'm doing it again this year, they loved it!
My man!!
Man Your videos are killing me! now I’m starving
Malcom fun video. But be sure to checkout Alton Brown's How to Build a Turkey Derrick for safety around that turkey fryer! Greatly reduce chance of burns and an easy device using typical house hold equipment.
Wow Malcolm I shared your video with my brother in law and he has all the equipment to try this. He smoked-a fried about 4 turkeys yesterday and said all came out great! The bad part for me, I live about 200 miles away and can’t try it!! 😢
Do the sell steel-toed Crocs? Take care
I'm shocked that the Thermoworks probe didn't melt in the oil. Definitely will try this.
oh fuck yeah....
Malcolm I was wonderin was those crocs OSHA approved. Dang that 🦃 bird looks good
Smoked and fried 🤤🤤🤤🤤🤤🤤
Can separate the skin from the flesh and insert some good thick bacon too 😋
My personal advice: a bit of a bigger bird and a 48 hour brine, other than that you are golden, oh yeah and you might wanna finish with some aromatics as well.
I thought about smoking on and then putting it a greaseless fryer. What do you think?
How long did it take you to smoke the turkey to reach a core temperature of 150 degrees?
Welp.. looks like Im about to go buy a deep frier 😁
I need to get some safety crocs
Look out for melted crocs
Delish🙏🏿😊
I wish you were my neighbor.
That has to be so good. Only negative is it takes a lot of work/cleanup
.........I know where you got this idea from they did it 1st it's cool
Malcom--great job as always! Still laughing, though..."Whew--safety Croc ain't working!" 😂
Boom! I will be doing this for Thanksgiving! Thank you Malcom!!!
lol me too
Me too!!!
How did they turn out?
Thank you, Malcom! Last week when I saw this video I knew I had to try it for my work's potluck today. I've smoked turkeys in the past but have never deep fried them. I made two smok-a-fried turkeys today for the potluck and everyone absolutely loved them. Thanks for the inspiration and keep cookin'!
Malcom, you take BBQ to the limit! I've done the brine and the smoke but never have I thought about a deep fry as a finish . I can't stop thinking about this. I'm going to have to try it. I just don't think my wife will trust me with a turkey, I might try a chicken first. Thank you Malcom , you're the man!
I did a couple chickens on the smoker two weeks ago for practice. My wife picked up a Turkey for me to smoke this Sunday to perfect. Now he adds a deep fryer to finish the turkey off and I am back and square one.
@@garywilliams7484 Lol, I know what you mean! The deep fry finish for such a short time and the extra amount of work to achieve that perfection has my brain in a knot. I guess I'm going to drink more beer till I can convince myself that level of BBQ perfection comes with a price.
@@Robalo-2660 I am struggling to justify the added cost just to make the skin a little more crispy. I can add a couple of logs to bump up the heat in my smoker for the last hour and get great skin.
@@garywilliams7484 Your right, that is a lot of cost to just get a crispy skin. But like Malcom said, you can reuse that oil. I typically fry a couple of turkeys for family and friends and then I use the oil for the last time on Rivalry Saturday to deep fry Buffalo chickens and have a watch party for all the great college games that day. So I use that oil on at least 3-4 turkeys and a couple of chickens, getting my moneys worth out the oil. And something about a smo-fried turkey sets it apart from a plain ol' smoked turkey.
I highly recommended killing the propane flame before lowering your bird in the oil. Then turn it back on when it's in. We don't want any accidents in the HTBBQR community. Be safe, friends.
This guy has BEEN that dude for a long time when it comes to BBQ
This right here is some next level turkey. Never thought to smoke it and then fry it. I think this is a game changer.
Mmm to smoke a fried turkey or fry a smoke turkey that is the qestion..question... Happy Thanksgiving either way👍👍🍻
Love your videos! I'm cooking my bird this year using this method! I also picked up some of your Killer Hog seasoning from Walmart (Phoenix, AZ), I'm looking forward to trying it out! Thanks for the videos!
Frying a turkey, whole.... The Russians never had a chance.
thank you for breaking it down!!With everything going on right now, the best decision to be on any creative man's heart is having a profitable investment strategy.

Dammit why you doing this to me son. I can taste it all the way from here in Texas. Love the demonstration on how to bbq right. Happy Thanksgiving Malcom
I always deep fry my turkey for the holidays and it comes out beautiful! This is another way to get even more flavor into that dude, so I'm trying it!
“Safety crocs ain’t workin’!” OMG!!! The funniest thing on UA-cam this year. That’s was classic. Malcolm…you need to come to the SF Bay Area (Fremont, CA) for an in person demo. You rawk! Continued good health and success.
I did not know that you can smoke and fry a turkey. Wow! With all the cooking videos on making Turkey that I have watched I just assumed that you can only cook turkey by frying it, smoking it and roasting it in the oven and that was it?
I wonder what would happen if you smoke and roast or roast and fry?
What's smart is That's a small turkey the smaller the better.........
The Bird is the word! Bird Bird Bird Bird is the Word!
Wonder how this would work with the Char Broil Big easy fryer
Will dropping the Dot probe in hot oil not damage the probe?
Did this last year by accident (had a grease fire and had to get the turkey out FAST.) We had the fryer going for the other turkeys and so we just finished mine off in it and it came out incredible. Everyone loved it.
That looks sooo freaking delicious 🤤
You never disappoint! And I wouldn’t compare your food to any fast food place! When I bbq I use a lot of your recipes thank you!
Regular or Menthol. Lol
I bow to you sir, what an amazing idea! To top it off, I had no idea you could use the probe in the hot oil!!! THANK YOU!
Now that's how you do a turkey!
I am dong his smoked Turkey from last year right now. He has gone to the next level with this.
Injection vs brine?
Malcom. My family is cooking our turkey on the grill this year thanks to your videos.
I watched all his turkey videos and combined all the main points to make one awesome turkey and it’s amazing
This man could make a plunger look appetizing
😂
3:55 This is where the video becomes USA itself
This is EXACTLY what I wanted to do this year and to find a video where someone was thinking like me!!! Can’t wait to try this!!🎉
"Popeye's aint got nothing on me y'all!" is my quote of the year. And you are right. Love your food. Love your style. Love your channel.
Deep fried turkey sounds good
I have thought about doing this for years but always too scared I'd mess up the bird and end up just deep frying instead. Thanks Malcom, I think this will be the year.
Been doing this for years, i usually smoke to about 120 and then to oil. Gives a crispier skin. I usually brine and do a Tony C's Cajun injection before hand. The family goes nuts over it.
Same
Let me tell you something Malcolm, I have been watching your videos for a long time now. You have such great recipes and we all know your food tastes good, you can't trust a skinny cook. This video is so great that I tried it yesterday and you know what? My kids didn't like the taste of just plain cooked turkey but when I gave them this, they asked for seconds and wanted more a few hours later. Thank you for your videos and the awesome camera work from the wife. Thank you again
I Swore off turkey years ago ,this looks good and I, .. WHOA, the How to BBQ Right STORE !!! " Lets Get to Shopping"😗
Are you even smoking when its set to 275 degrees?? Practically baking at that point.... 🤨🤔
I will be doing this soon..maybe before turkey day. I just need a fryer burner and pot....
Awesome video as always!! however Can I make a request that we start moving towards 4K video, would look way better on the TV
WOW!!! Absolutely amazing and I cannot wait to try this one.
I tried this turkey last Sunday. And my family loved. They have brought turkeys for thanksgiving
