Thanksgiving Turkey Smoked AND Fried - Best of Both Worlds!

  • I did a Smoked Fried Turkey - or Smo Fried Turkey. First I brined a whole turkey, smoked it with pecan wood half the way, and then deep fried it in peanut oil for the last step to get a juicy, smoked turkey with a crispy turkey skin.

    Smoked and Fried Turkey Recipe
    Ingredients:
    - 1 Whole Turkey 12lbs
    - 1 bottle Malcom’s Bird Brine bit.ly/H2Qbird...
    - 2 gallons Water
    - 1 can Vegetable Cooking Spray (or your favorite oil)
    - 2 Tablespoons Killer Hogs AP Seasoning bit.ly/TheAPRub
    - 2 Tablespoons Malcom’s King Craw Seasoning bit.ly/KingCra...
    Directions:
    1. Remove thawed turkey from packaging be sure to check the cavity and neck area for giblets.
    2. Place the turkey in Meat Bag or large container and pour in the bottle of Bird Brine. Add 2 gallons of water (enough to completely submerge the bird) and place in the refrigerator or in a cooler on ice for 24-48 hours.
    3. Remove turkey from brine and allow to drain. Place on a wire rack over a sheet pan and place in the refrigerator for 2 hours to dry the skin. (It helps to pat the excess moisture off the skin with paper towel)
    4. Prepare pellet grill for indirect smoking at 275°F using pecan pellets.
    5. Spray the skin with the cooking spray - or another oil - and season with AP seasoning on all sides.
    6. Place the turkey in the smoker breast side up until an internal meat probe hits about 150° F.
    7. Set up a turkey fryer for deep frying at 350°F using peanut oil for best flavor. Any clear frying oil will work.
    8. Remove the turkey from the smoker and insert the turkey frying rod/hanger through the cavity. 9. Leave the meat probe inserted in the thickest part of the breast to monitor internal temperature while frying.
    10. Carefully lower the turkey breast side down into the hot oil. Use extreme caution and follow the turkey fryer directions carefully.
    11. When the internal temperature reaches 165°F in the breast, carefully remove the turkey from the hot oil allowing it to drain. Place the turkey immediately on a cutting board breast side up and remove the turkey frying rod/hanger.
    12. Season the outer skin with King Craw Cajun Seasoning and let the bird rest for 5-10 minutes before carving.

      I live in NY and there’s been several house/
      yard fires in my county that fire departments
      had to fight because amateurs tried to
      deep fry their Thanksgiving turkey. There
      must be some success stories for every
      epic failure, so some northerners definitely
      do it- it’s just unconventional here

    Malcolm, buddy... That looks outstanding! I've got a 19 lb bird that I'm going to do on Thanksgiving. I don't have a Treager, so I'm going to try and do it on my offset stick burner, and then drop that baby in the oil. I can't wait!!

    Nice glad someone had the same idea.. I’ve been smoke frying my turkey twice a year for 5 years now.. the issue I had was the visual aspect after it’s fried because how dark it got but the flavor is amazing and juicy.

    Malcom this is an awesome video! My plan is to brine, smoked, and deep fry a turkey breast this years. I may add some turkey legs as well but I don't want to do a whole turkey. Thank you for the great videos you always post!

      @@LVGRCCrawlers I don't pull at a temp. I smoke for 2-2 1/2 hours at 275. Then fryer. I check temp until it's done.

    I'm definitely doing this next year! Try and find a local farm, and if they raise a heritage breed even better. That'll fix the lack of base flavor in the bird. Butterball and those other mass market ones can't hold a candle to the real deal! Once I splurged on a nice bird I couldn't go back.

    Malcom...great idea smoke then fried....You might have a better result w the char grill big easy oil less fryer....that infrared fryer is amazing and no oil to take away the seasoning

    I don’t cook whole turkey anymore but I will make some legs. I’ve found the best way is to brine, sous vide and finish under high temp in a smoker.

    I did this the last 2 years. My favorite part of chicken and turkey is the crispy skin and I got sick of my holiday turkeys having soggy skin. My family now asks if I'm doing it again this year, they loved it!

    Wow Malcolm I shared your video with my brother in law and he has all the equipment to try this. He smoked-a fried about 4 turkeys yesterday and said all came out great! The bad part for me, I live about 200 miles away and can’t try it!! 😢

    My personal advice: a bit of a bigger bird and a 48 hour brine, other than that you are golden, oh yeah and you might wanna finish with some aromatics as well.

    Malcom, you take BBQ to the limit! I've done the brine and the smoke but never have I thought about a deep fry as a finish . I can't stop thinking about this. I'm going to have to try it. I just don't think my wife will trust me with a turkey, I might try a chicken first. Thank you Malcom , you're the man!

      I did a couple chickens on the smoker two weeks ago for practice. My wife picked up a Turkey for me to smoke this Sunday to perfect. Now he adds a deep fryer to finish the turkey off and I am back and square one.

      @@Robalo-2660 I am struggling to justify the added cost just to make the skin a little more crispy. I can add a couple of logs to bump up the heat in my smoker for the last hour and get great skin.

      @@garywilliams7484 Your right, that is a lot of cost to just get a crispy skin. But like Malcom said, you can reuse that oil. I typically fry a couple of turkeys for family and friends and then I use the oil for the last time on Rivalry Saturday to deep fry Buffalo chickens and have a watch party for all the great college games that day. So I use that oil on at least 3-4 turkeys and a couple of chickens, getting my moneys worth out the oil. And something about a smo-fried turkey sets it apart from a plain ol' smoked turkey.

    I highly recommended killing the propane flame before lowering your bird in the oil. Then turn it back on when it's in. We don't want any accidents in the HTBBQR community. Be safe, friends.

      @@mackea4651 The fluctuations of the market only affect those that hodl coins, but traders makes money on both sides, when it's bearish they go short when it's bullish they go long...     I did not know that you can smoke and fry a turkey. Wow! With all the cooking videos on making Turkey that I have watched I just assumed that you can only cook turkey by frying it, smoking it and roasting it in the oven and that was it?
    I wonder what would happen if you smoke and roast or roast and fry?

    Did this last year by accident (had a grease fire and had to get the turkey out FAST.) We had the fryer going for the other turkeys and so we just finished mine off in it and it came out incredible. Everyone loved it.

    Been doing this for years, i usually smoke to about 120 and then to oil. Gives a crispier skin. I usually brine and do a Tony C's Cajun injection before hand. The family goes nuts over it.

    Let me tell you something Malcolm, I have been watching your videos for a long time now. You have such great recipes and we all know your food tastes good, you can't trust a skinny cook. This video is so great that I tried it yesterday and you know what?
