Thank you, Malcom! Last week when I saw this video I knew I had to try it for my work's potluck today. I've smoked turkeys in the past but have never deep fried them. I made two smok-a-fried turkeys today for the potluck and everyone absolutely loved them. Thanks for the inspiration and keep cookin'!
Malcom, you take BBQ to the limit! I've done the brine and the smoke but never have I thought about a deep fry as a finish . I can't stop thinking about this. I'm going to have to try it. I just don't think my wife will trust me with a turkey, I might try a chicken first. Thank you Malcom , you're the man!
I did a couple chickens on the smoker two weeks ago for practice. My wife picked up a Turkey for me to smoke this Sunday to perfect. Now he adds a deep fryer to finish the turkey off and I am back and square one.
@@garywilliams7484 Lol, I know what you mean! The deep fry finish for such a short time and the extra amount of work to achieve that perfection has my brain in a knot. I guess I'm going to drink more beer till I can convince myself that level of BBQ perfection comes with a price.
@@Robalo-2660 I am struggling to justify the added cost just to make the skin a little more crispy. I can add a couple of logs to bump up the heat in my smoker for the last hour and get great skin.
@@garywilliams7484 Your right, that is a lot of cost to just get a crispy skin. But like Malcom said, you can reuse that oil. I typically fry a couple of turkeys for family and friends and then I use the oil for the last time on Rivalry Saturday to deep fry Buffalo chickens and have a watch party for all the great college games that day. So I use that oil on at least 3-4 turkeys and a couple of chickens, getting my moneys worth out the oil. And something about a smo-fried turkey sets it apart from a plain ol' smoked turkey.
Did this last year by accident (had a grease fire and had to get the turkey out FAST.) We had the fryer going for the other turkeys and so we just finished mine off in it and it came out incredible. Everyone loved it.
This is quite literally the best turkey I have ever tasted. Made a trial run version before Thanksgiving and it was the tastiest turkey anyone at dinner had ever had.
Let me tell you something Malcolm, I have been watching your videos for a long time now. You have such great recipes and we all know your food tastes good, you can't trust a skinny cook. This video is so great that I tried it yesterday and you know what? My kids didn't like the taste of just plain cooked turkey but when I gave them this, they asked for seconds and wanted more a few hours later. Thank you for your videos and the awesome camera work from the wife. Thank you again
Did one of these last month for a friend’s party. Fantastic way to do a bird. Also, good call on seasoning after pulling from the oil! Need to remember that trick.
Malcom, thank you, thank you, thank you. Yesterday I made two turkeys following your recipe including purchasing all the ingredients from your website. Many of my guests said that it was the best turkey that they ever had. I have to admit it was the best that I ever had. It was amazing.
I had issues with my fryer burner this thanksgiving with 2 turkeys to cook. Put the first one in and the oil temp was not recovering. With time running out with family on the way, I fired up my pit and thru the first bird in it to finish. Dropped the second bird in the fryer to get it going. Ended up frying both birds to half way done and finished off in the pit. They came out AWESOME!!! Family said that was my best ones yet. I highly recommend this procedure.
Malcolm, buddy... That looks outstanding! I've got a 19 lb bird that I'm going to do on Thanksgiving. I don't have a Treager, so I'm going to try and do it on my offset stick burner, and then drop that baby in the oil. I can't wait!!
Love your videos! I'm cooking my bird this year using this method! I also picked up some of your Killer Hog seasoning from Walmart (Phoenix, AZ), I'm looking forward to trying it out! Thanks for the videos!
“Safety crocs ain’t workin’!” OMG!!! The funniest thing on UA-cam this year. That’s was classic. Malcolm…you need to come to the SF Bay Area (Fremont, CA) for an in person demo. You rawk! Continued good health and success.
Today finally bought some seasoning of yours that my Walmart finally placed on their shelves. after watching you for years. Your AP seasoning and your BBQ rub. Excellent taste. 5☆s!
Been Smoking then Frying my Turkeys for years. That's the "ONLY" Turkey my Family and Friends want. Thanks for sharing with others. Happy Thanksgiving from Cut and Shoot, Texas
Nice glad someone had the same idea.. I’ve been smoke frying my turkey twice a year for 5 years now.. the issue I had was the visual aspect after it’s fried because how dark it got but the flavor is amazing and juicy.
Malcom this is an awesome video! My plan is to brine, smoked, and deep fry a turkey breast this years. I may add some turkey legs as well but I don't want to do a whole turkey. Thank you for the great videos you always post!
Dammit why you doing this to me son. I can taste it all the way from here in Texas. Love the demonstration on how to bbq right. Happy Thanksgiving Malcom
I did this as a last result last year. The smoked turkey wasn’t ready my fire just went out on the smoker and everyone was showing up. I panicked and pulled out the electric fryer. Got it up to temp and dropped it. Everyone loved it!
I have thought about doing this for years but always too scared I'd mess up the bird and end up just deep frying instead. Thanks Malcom, I think this will be the year.
OMG 😳 I legit JUST typed in the yt search engine 3 days ago: "smoked and fried meats" and of ALL ppl I get to watch one of my fave UA-camrs shed light on this for me!!! 🙌🏽 You don't even know how geeked I am! Tfs!!! *Pulls out pen and pad
Come on man! You playing with all my emotions now. I heard about this on your podcast and I had to check it out! Beautiful cook brother. Appreciate what you do!
First thing I thought when I saw the crocs was you should of had em in 4wd in case you had to get to skidaddlin on outta there! Looks awesome Malcom thanks for another good one.
smoking a turkey for my gf family for the first time. just watched your 9 year old video and now gonna watch this. should have known you would be on it!
Im not sure if you think this or not, but you a funny guy. I sit here, drink my beers, and watch your videos. Love your videos and trying your recipes. ...
Just pulled my turkey out of the oil ,after smoking , I can say , mine sure isn't the prettiest thing but it sure is good, this was a winner, 1st time trying, I would suggest, if you got the time.
This looks so great, amazing! Thank you for the video, great content! Keep the grind going my friend, your videos are amazing, I would love to see some more shorts for sure though please you’re able to 🙏🙏💪💪🫶
i do this as well but i smoke lower temps bout 200 or even a cold smoke, i fry for the longer cook. oil is too expensive to waste that much for only a 5 min fry lol. looks delicious!
I've been Smo-frying turkeys for the last 5 or 6 years now, and will never go back. I like your tip about wiping out the moisture after smoking. I've never had a problem with oil boiling over in the past, but a little extra safety can never hurt. Is the probe you used the standard one that comes with the dot thermometer set? It would be so nice to have one in the bird when dropping it in the oil. Having to pull it up to use an instant read thermometer every few minutes is a pain.
Hey Malcom just listened to your podcast on the smoked deep fried turkey. We do something similar where we boil the turkey(or chicken) in crab boil let it marinate and then dry off before flash frying it.
I did not know that you can smoke and fry a turkey. Wow! With all the cooking videos on making Turkey that I have watched I just assumed that you can only cook turkey by frying it, smoking it and roasting it in the oven and that was it? I wonder what would happen if you smoke and roast or roast and fry?
Been doing this for years, i usually smoke to about 120 and then to oil. Gives a crispier skin. I usually brine and do a Tony C's Cajun injection before hand. The family goes nuts over it.
Hell ya. Great idea. Me scared of hot oil though. I thinking, maybe a 50/50, flour to baking powder with spice seasoning after the brine and just smoke it til done. Your turkey came out looking great. Thanks for the tips.🤘
I watch all of your videos for years! I love how you make bqqing look so easy once I finish building my house im going to buy a grill, do you have any suggestions on which one I should get ?
What kind of a probe do you use that can be immersed in the hot oil? Can you brine a bird that has be injected with a solution like a lot of the frozen ones are? Finished product looked fantastic!
I did this the last 2 years. My favorite part of chicken and turkey is the crispy skin and I got sick of my holiday turkeys having soggy skin. My family now asks if I'm doing it again this year, they loved it!
Looks awesome. Safety tips ware closed toes shoes. Also use welding gloves. I dip the turkey up and down in the oil to settle the oil down. Always remember to turn the flame off while placing the bird in the oil to avoid oil fire. Be safe.
A smoked, deep fried turkey video to start November solidifies why Malcom is that dude! His own ab libs during the cooking is hilarious too! 😂😂

Malcom--great job as always! Still laughing, though..."Whew--safety Croc ain't working!" 😂
I bow to you sir, what an amazing idea! To top it off, I had no idea you could use the probe in the hot oil!!! THANK YOU!
Malcom, you take BBQ to the limit! I've done the brine and the smoke but never have I thought about a deep fry as a finish . I can't stop thinking about this. I'm going to have to try it. This right here is some next level turkey. Never thought to smoke it and then fry it. I think this is a game changer.
I always deep fry my turkey for the holidays and it comes out beautiful! This is another way to get even more flavor into that dude, so I'm trying it!

I watched all his turkey videos and combined all the main points to make one awesome turkey and it’s amazing
Smoked n fried is the way to go. Flavor and color always on point

Lord Reed of Malcom with yet another killer recipe! Looks incredible!
HUGE FAN! You gave me the knowledge and inspiration to start smoking! love your killer hogs rub!!!! all the way out from San Jose CA
I trust this man. I've followed a few of his recipes and I was the hero of the party.
