    700g / 1½lb of a sausage of your choice; I’m using pork
    170g / 6oz dried Sage and onion stuffing mix
    80g / 3oz Butter
    400g / mls / 14oz chicken; beef; or vegetable stock
    Salt and pepper to taste

    I’ve never had stuffing with sausage in it and could never imagine what it would be like. From this I see it’s almost like a meatloaf, which I never would have guessed! Looks amazing.

    Hi John
    Made a batch of this using your recipe and it is delicious.
    I bought 2 packets of sausage meat and mixed everything together using 1 sachet.
    You inspired me using your silicon loaf tray, so I bought one just for this and everything worked out perfectly.
    I ended up freezing this, to use anytime I make a roast carvery and not just for Christmas.

    We roasted the turkey as per your video - perfect - We cooked the ham as per your video - perfect. But the Stuffing? FANTASTIC! Made it exactly as your video, but swapped the S&O stuffing mix for chopped sage and onion powder due to one of our dinner guests being on a gluten free diet. It was absolutely amazing. The best S&O stuffing ever, and every dinner guest raved about it. I made two batches (thankfully) and cut the second one in two so two of the guests could take it home with them. Your videos have been invaluable this Christmas and made cooking all 3 dishes so much easier and more fun. Thanks for all your time and efforts John.

    I made half the quantity, what an excellent recipe and used Cumberland saugage and it was extremely tasty. I used it once with turkey and a second time with lamb. It really is worth doing. Thank you John

    In the American South, stuffing goes inside the bird; if it’s outside the bird, it’s dressing. Me, from the South and my wife, from New York, tease on each other about this every year.

      Usually goes inside the bird here too David, but when you're catering for 2 to 3 hundred patrons, this is by far the best way to make it, I have this stuffing all year round, usually sliced and fried in a little butter, to go towards my full English breakfast 😋.

    I’ve never had stuffing like this. In Canada stuffing is always bread based. I’m definitely going to give this a try. I expect my husband, who is from Scotland, will really like it! Thanks for another great recipe!

      I prefer to add breadcrums and no stock. Also I mix it a few times to get more crispy bits.

      It's also bread-based in America (and from a box, but there are families who make it the old-fashioned way). I used to hate stuffing regardless of how it's made; now, it's the first thing I get on my Thanksgiving Day plate (that and homemade cranberry sauce).

    Amazing and easy to do recipe to get that home cool feeling! I added some bacon to the underside of the tin so when tipped out had 3 crispy bits of bacon on top 💪

    A stuffing story, we used to have a butcher/baker near our work and they sold pots of homemade stuffing all year round. It was reputedly amazing, always having to be careful on what I eat one day I fancied a turkey and stuffing sandwich. I asked one of the girls who warned me that it won't be good for me? She let me know the secret recipe, they had a chicken rotisserie and the butcher added all the fats and juices from it to the his stuffing. Imagine how good that would taste John. No wonder it was so popular. Great video as usual John.

    The kneady homesteaders parents came from Wales and she makes sage and onion stuffing bread as her mum made.it reminded me of paxo and I'm sure that's why her mum made it.

    Hi John I've just made this and it was amazing. As you said there is so many variations. I used a little less sausage and a little more stuffing mix and cooked it for about 1 hour as I like the crispy edges! Looking forward to creating a variation of this for Christmas day now I've had a trial run. Thanks for this amazing recipe

    When you said it would serve eight to ten, (I think it was) I said to myself, "Or me and my sister."
    Thanks, I need to try this sometime. I see Mary W already commented that your stuffing recipe is more like what we call "meat loaf" in the US. Tuesday next I will be baking two big loaves of bread, one wheat and one white, to cube for the dried bread for the dressing for our solstice meal. We are stuffing the turkey with old fruits, celery, and onions, for flavor. I'd like to have a lot of Oranges to stuff into the turkey, but think the wrinkled apples in the basement will do nicely. So our stuffing will really be pans of dressing baked separately.
    I like using at least two types of cubed bread so you can see the different colors of the breads, as well as a ton of onion and herbs. Wishing you joyous holidays. Thanks for your inspiration.

    Thank you for remind me this wonderful recipe . In my country, we make this recipe using mince lamb with a lot of green garlic, green onion and dill. Place 2 or 3 boiled eggs on the length of pan, in the middle. When cut the slice , in the midle of it will be an egg circle . 😊👌 .     I love S&O Stuffing, but we only normally just use the dry mix from the shops - NEVER thought of adding it to sausage meat - we are definitely going to give this a try - will give me something to do Christmas Eve - well done John.

    Merry Christmas from Nova Scotia Canada. I make my mom's sausage stuffing that I form into balls. I grind apple, celery, onion and carrot, add poultry seasoning and salt and pepper and some Keto bread that I make all mixed with bulk sausage meat. No measuring just because I have done it for over 50 years. Sometimes I add chopped nuts or regular breadcrumbs that I make from saved bread ends. I always add lemon zest and juice. As you say you can make it any way you like .

    Hi John. Going through your Christmas menu I pounced on your stuffing. Like many of your fans, we don't live in the UK so we don't have access to packets of this or that, especially specifically British products such as sage and onion stuffing! So we have to scour the internet for "from scratch" recipes, which is how I found your excellent videos. Sadly you are no help today, so after the tantalising reference to using fresh sage and onions, I search on. Never mind. I'll be back! :)

    I've never actually tried this. Just always brought a packet of stuffing mix . Added water and cooked it like that or just wrapped bacon round it . Think this will be on the menu next time we have a roastie :)

    Hi John, Used to watch my mum, God rest her, make her version of this over 60 years ago. Now it is still made by me every christmas for my family for around 43 years.
    A great addition to the table, however, should there be any left over (Highly unlikely) makes a great sandwich.

      I make this all year round, I slice mice individually wrap and freeze them, once a month we have a good old fashioned cooked breakfast, bacon, sausage, egg, fried bread, and tomatoes, and the star, is a slice of this fried in butter, wonderful.

    I like the look of that, when I make some dressing I add sausage meat but I also put some turkey wings on top. I perforate the wings with a knife so the juices run in to the dressing. It gives it a nice flavor and we'll even ta pieces off from the loaf in the fridge to nibble on ...Hal

    John I had corn bread dressing my whole life my Grandmother, Mother and my wife all make cornbread dressing at Christmas time and Thanksgiving. This looks very good. Have you ever made cornbread dressing or tried it? I’m sure you’ve been asked.

      No Su, apart from appearance and shape, this stuffing entirely different to meat loaf, but by all means experiment.

    Hi John, this is a great recipe that we've used for a few years now. I normally make it on Christmas eve and keep it in the fridge overnight. Just wondering how you would reheat it on Christmas day? I have been slicing it then using the microwave. Would the oven be better? 😀

    Thank you for sharing this! Our traditional stuffing is very similar ( we cheat with Paxo) but usually in the bird, LOVE that I can make this in advance, cooking in the bird slows everything down and there is never enough! I have 25 coming this year so anything I can do in advance is awesome, the only thing I’m a bit worried about is the reheat, do you suggest microwave over oven? Anything special I should know to not dry it out?? Cheers from a Scot in Canada 🇨🇦

    I decided to have a dry run today to sample this and I have to say it tastes amazing, much better than just the usual adding water to a packet of a well known brand.

    I make a bread, sage and onion stuffing with roasted turkey.
    This would be a nice extra but we dont have the packaged mixture here in the states but we do have Jimmy Dean Savory Sage sausage in a 1 lb roll.
    Actually this is similar to our traditional meat loaf except we use ground beef and no stock or butter.
    My favorite meatloaf is 1lb sausage and 1 lb ground venison. Delicious.

    I love stuffing - bread stuffing with spices and other additives. Stuffed in the turkey moist from stock and eggs then cooked with the turkey to absorb all the wonderful fat and juice as it cooks. I know some people cook it separately and I've done that also (sometimes in a large pan with pork chops cooked on top, but it is either herb bread or corn bread based. I've never seen your stuffing before as it seems more like our meat loaf. So many questions I have about this. There didn't seem to be much fat cooked out of it and assume your pork sausages much be way leaner than ours. I've never seen a box of sage and onion stuffing before - is there bread crumbs finely chopped, also? Our stuffing is usually cubed bread. This seems more like a main dish instead of the side but I think the box stuff must take it to a different place than what I can imagine. Can you tell me the ingredients in the box or maybe what you would use if there wasn't a box? I'm certainly intrigued with this and thank you for sharing your traditional feast with us. So interesting and new to me here in Florida.

      Sage and onion stuffing mix is probably only available in UK and places like Australia and here in South Africa. You can make your own by using bread crumbs, sage and finely chopped onions, seasoned as you like. Sausage meat stuffing is also very British. Many people do stuff their chicken and tyu

      Pepperidge Farm has a sage and onion stuffing mix. Can use a food processor to make a finer texture if it is cubed.

    This might be a silly question but as a German I think I didn‘t understand yet why the stuffing isn‘t stuffed into something? 😇🤪 do you really eat it as a meat loeaf or is this just a practical way of showing how to do it? Do you serve it as a side aditional to a turkey or IN the turkey? 😁 it looks yummie, though, thanks for sharing!

    John - can I make this and freeze please. I ask because there is only the two of us this Christmas and no way would we eat all that stuffing so if I can freeze some it would help. It does look good and would be wonderful with cold cuts at New Year, hence the reason for freezing some down if possible. What do you reckon.       Yes you can B, I slice mine into 1in thick slices, wrap, and freeze them individually, they are great great fried in a little butter, to go on a cooked breakfast, absolutely delish.

      Just got to tell you, today I made my stuffing. I added half a jar of whole chestnuts that I chopped and mixed in. Three small foil dishes 4" x 3" are now in the fridge cooling off ready to go into the freezer.

It has been 2 weeks already and we have yet to recover. Thank you again for the recipe. By the way, can this go well with roast chicken instead of turkey. I am a malaysian chinese and my family don't fave turkey much due to the tough and dry meat. I usually buy a 2 kilo chicken and roast it myself.

      Hi Lucy, thank you for the support. We send out Uk orders first class so it should be 1 to 3 days, depending on the time of order. International mail normally takes 8 to 12 business days from the UK, but due to the Covid19 situation, it's taking a bit longer, especially to the USA, Canada,

    Hi John, I have a family who do not like pork at all (I myself love it!) so was wondering if you could recommend a substitute, if any? I could make it on it's own without meat but feel like it wouldn't be as flavoursome!

      Tryn using ground beef, or chicken Dee, but you need some kind of meat.

    Hello John, could you redo this recipe without the dried stuffing mix? I live in Canada where it's not easy to find.
