When I was growing up, I use to watch my Mom, Making all the Ravioli's by hand and a rolling pin & cut them out round with an empty Jelly Glass, Then lay them out on a clean Sheet, to dry a little before cooking them, They were better than any store made ones of today, Etc. I don't remember if I commented on this before, I love watching your videos !! This one almost made me cry. When I was little I was in the kitchen with my mother, two grandmother's, my great aunt and my great-great aunt making home made ravioli. They made it with beef, pork and chicken all mixed together with parmesan, eggs and parsley with spices. My job was to get in the way. I really miss them !!!🥰🥰🥰🥰
Pascuale, you brought me back to Argentina. Many years ago, when I live there, I saw the Italians making Ravioli this way. Thank you for bringing back good memories. I love pasta or noodles how Argentines called it.
This as a really nice demonstration, and I will watch it several times over. I’ve never made home-made pasta. I know this is not easy. The only thing, Chef Pasquale, that I wish you had added is HOW you cooked it, because I am told by people who have done it that it is important to simmer it gently, so your ravioli does not come apart and ruin your dish. But thank you very much, a nice honest, detailed instruction.

I lived in Bari as a kid. I would watch the ladies make ravioli in big sheets, probably 3 feet wide and as long as a picnic table and 4 or 5 ladies would cover and cut all together, such great memories, I miss so much
With so many ravioli recipes around it s extremely difficult to know when, how much and what...Pasquale makes me feel like I can really make stunning, delicious ravioli.

+VengeFulHemi rolling pin can be used but keep in mind the thickness can vary from a machine. Look online or Amazon, they have hand cranked rollers for around $20-30.
