Try this satisfying and easy to make Avocado Cucumber Corn Tomato Salad - Quick and Easy Salad recipe.
INGREDIENTS:
2 Avocados
1 Cucumber
2 sweet corns on the cob grilled or boiled.
1/2 cup each red and yellow cherry/grape Tomatoes
1/4 of a large red Onion
1/3 cup of cooked black beans
Dressing/vinaigrette: 3 tbsp Olive Oil, 1 clove of garlic grated, juice of half a lemon, or 1 & 1/2 tbsp of lemon juice, 1 tsp mustard, pinch of salt and crushed black pepper, and 1 tsp fresh or dry parsley.

You can substitute with those vegetables you love! This recipe allows for substitutions, especially with the vegetables, so absolutely go for it dear 🙏🏽🤗😎
