    Serves 4Prep time: 15 mins
    Cook time: 15 mins
    Ingredients:
    6 Eggs, separated
    1/2 cup of Coconut Flour
    1/2 cup of Unsweetened Almond Milk or any milk of your choice
    2 Tbsp of Coconut Oil, melted or you can use melted butter
    1/4 tsp of Salt
    1 tsp of Baking Powder
    Process,1) In a bowl using a handheld electric whisk, beat the egg whites until stiff peaks form, set aside.
    2) In a separate bowl, whisk the egg yolks with the coconut oil and almond milk, then add the coconut flour, baking powder and salt and mix those in until combined.
    3) Gently fold in the egg whites until thoroughly mixed, then allow the batter to rest for about 5 minutes while you preheat a nonstick skillet over medium low heat.
    4) Cook the pancakes in batches (I use a 1/4 cup measuring cup to insure that they are all the same size) and if you’d like, once you add the batter to the pan, sprinkle some blueberries over the top. These tend to take about 3 minutes on each side to fully cook so be patient.
    5) Serve with some fresh berries on top and some maple syrup and dig in!

      Thanks. I have a question are these pancakes 🥞 high in carbohydrates and sugar what I am trying to find out is will these make my blood sugar get very high as have type 2 diabetes. Again thanks for this awesome video and pancake 🥞 recipe

    I just made them for breakfast this morning and it tasted like omellette with coconut. 6 eggs is way too much. I would reduce it to 3 and keep everything else the same.

    I tried these and even while they looked like Laura's, the taste was not of a pancake as it was too eggy. I don't know how difficult it is to make a gluten-free pancake but this was rather thick in texture, even when I served them with cream and maple syrup. Maybe they are more of a heavy soufflé?

      Sara Elizabeth Woods sweetened flakes are 5gr sugar & 6gr carbs for 2T. I only had sweetened.😏

      I was just going to say that too. I was on the paleo diet a few years ago and the recipe I found was so dry and dense, the egg whites really help. I'm a diabetic, and I'm cutting back on carbs, now this is a recipe I'm going to try. I love pancakes 😊

      +Libra Fleur well, I'm not on a strict PALEO diet but most of the foods that I eat is PALEO.. Not every person who follows the paleo diet is strict.. Not even the strictest paleo dieters, because we all treat ourselves with ice cream, or doughnut every now and again.. The only thing I'm worried about (personally) is if it's 90% paleo than I will make/eat it.

      +picantesworld77 yes, I tried the ingredients with a ripped banana, cinnamon and 2 eggs and it was good but it taste more like a soggy pancake, it was nothing close to being fluffy..

    if you don't want to add the eggs you could just whip up some chickpea water? or something like that, i've seen it being used as a meringue before. As for the egg yolks I'm sure there are plenty of substitutions, just google it.

    Do you have a lemon poppyseed pancake recipe?

      Just add in some lemon juice, vanilla extract, and poppyseeds to this and it will totally overpower the coconut flavour! Maybe a tablespoon or two of lemon juice and a tsp of vanilla? :)

    Hi Laura, I love love your recipes. I have been subscribed to your channel for over two years now. Recently I decided to transition to eating vegan for health reasons; but, three months in, I am already struggling to come up with fresh recipes I actually want to eat. Let alone enjoy!     I had to add a tbsp of honey, some vanilla & cinnamon because it tasted too eggy and not sweet at all, even with maple syrup on top. Still they were just alright for my taste and all the work that was involved.

    these were just ok. they just taste like cooked egg whites with coconut flavor. the consistency was also nowhere near real pancakes. too bad, i was really looking forward to this.

    I use a drizzle of maple syrup with butter and blue or black berries and simmer it down to a wonderful keto syrup. Just a table spoon of maple will make a 1/4 cup of syrup taste fantastic. Not diluted at all. Then, you can drown the pancakes and have half the mixture leftover.

      Did you, yourself try pineapple slices before suggesting . Just for curiosity I tried ( thank god I experimented with small portion) .
      It was a disaster 🤮

    They taste just like eggs because they have at loy of eggs, now don't give me wrong, they do have the coconut texture but don't really taste like coconut. Not a great recipe for me🤷‍♀️

    @ Laura Thanks for your effort I always love your recipes but this time for me it is very EGGY ! it looks like a pan cake but all i can taste is eggs !! though i have added vanilla to the mix also the texture is very sandy and dry.

    If you don't eat eggs, use aquafava (the water from a can of chickpeas). You can whisk it just like egg whites and it will turn into a foam, or into more or less stiff peaks if you add sugar.

    If you can't eat eggs substitute the egg whites with chick pea water it will stiff up just like the egg whites and it won't taste like chickpeas trust me! And for the eggs use ground flax seeds, mix 3 tbls of ground flax seeds with one tablespoon of water per egg that your substituting.

    Its a compromise we have to make but when i tried the waffle version of these it was basically omelets with coconut flour in it. I like my eggs, but not when im expecting a waffle.

    Did this recipe exactly and it’s too eggy ...it tasted like I was basically eating a fried egg with flour in it. It was edible but not at all like a pancake. I would not try this one again :(
