recipe for ginger-garlic paste using 300g ginger and 350g garlic,
    Ingredients:
    • 300g ginger (peeled, washed, and dried)
    • 350g garlic (peeled, washed, and dried)
    • 4-5 tablespoons oil (any neutral oil)
    • 1 tablespoon salt (optional)
    • 1-2 tablespoons lemon juice or vinegar (optional, to retain color)
    Instructions:
    1. Prepare the Ginger and Garlic:
    • Wash and dry the ginger and garlic thoroughly.
    • Cut the ginger into small pieces to make blending easier.
    2. Blend the Ingredients:
    • Add the ginger and garlic to a blender or food processor.
    • Gradually add the oil while blending to create a smooth paste.
    • If using salt, add it at this stage.
    • To retain the color of the paste, add 1-2 tablespoons of lemon juice or vinegar. This will help prevent the ginger and garlic from darkening.
    3. Blend Until Smooth:
    • Blend the mixture until it becomes a fine, smooth paste.
    4. Store the Paste:
    • Transfer the paste into a clean, airtight jar.
    • Add a thin layer of oil on top of the paste to create a barrier from air, which helps maintain the color.
    • Store the jar in the refrigerator. The paste should stay fresh for 3 to 4 weeks.
    5. Freeze for Longer Storage:
    • If you want to store the paste for a longer time, freeze it in ice cube trays. Once frozen, transfer the cubes to a freezer-safe bag or container. This way, you can take out just the amount you need without exposing the entire batch to air.
    Additional Tips:
    • Use a Clean Spoon: Always use a clean, dry spoon when taking out the paste to avoid introducing moisture, which can cause spoilage.
    • Oil and Lemon Juice Help: Adding oil and lemon juice helps retain the color and prevent the paste from spoiling.
