To answer your question to as why Poppy and Holly have that ginger hair is because in the original tale Rapunzel's hair colour wasn't mentioned only that she has extremely unreal long hair but many known brands such as Barbie or Disney or more recent retellings depicted her with blonde hair so yeah probably that's why she mostly is designed with blonde (I also don't really remember but I think the Grimm brothers might have added the long golden hair detail but I'm not sure)
I actually liked the twins' hair being ginger, often there isn't a specific design for fairy tale characters, but because some choices became popular people tend to use it as a reference even if there is no criteria behind it, I mean, there are already so many blonde princesses that it has become a standard not just for Rapunzel, and the idea of the story is that the length of her hair is what is important, the color does not matter much as long as it is big hair. And besides that, this color makes the twins different from other blonde characters in Ever After High.
Oh man I forgot about Barbie's Rapunzel. man that movie brings back so much nostalgia. But it was also kinda creepy, they did such a good job of portraying Mother Gothel, she was terrifying lol. I remember the part that creeped me out the most was where she got tricked into staying in the tower forever. Like when you think about it, that's truly horrifying...being stuck in one place for literally the rest of your life

I would say you should do Aladdin next, but the Arabian Nights get left out of all the big fairy tale crossovers
