A small tip for those who only have thin bottomed pans, put a layer of potato slices at the bottom first and then add the rice mixture on top of that. That way, the potato will get burnt instead of rice. And burnt potato is really tasty too 😄 This is how I make biriyani all the time!

You can easily do this in a rice cooker instead of a claypot too. Been cooking it this way for many years. A tip would be to let it sit in the rice cooker after it's cooked for 15-20 mins and you'll get a delicious crispy rice crust at the bottom!

I am from Malaysia. Claypot chicken rice is one of the famous food for local Chinese community. And the fact is, we like to eat this with the rice burnt up in the claypot. It make the rice more chewy and crispy. Anyhow, I found Marion's recipe is quite authentic and original, thumb up :)
Just made this in our rice cooker last night and it was delicious! my little toddler who isn't a fan of mushrooms ate this for two meals back to back! I added carrot and cabbage in mine for hidden veggies and she ate it all without blinking! Tastes even better the next day and that crispy bottom is yum!

Made this last night with a couple alterations as I always do, but it still came out DELICIOUS! Actually used whole bone in skin on thighs and cooked it longer obviously but rice was not overcooked or mushy. Used a 4" deep cast iron La Creuset pot. The house smelled so good and the flavor payoff was so satisfying.
Marion, great recipe. I love one pot meals. Because I cook for a big family, I cook my rice in the rice cooker, and my chicken mixture in a wok. Just when the rice turns off, I pour my chicken mixture on top of the rice and close the lid for another 10 min. All the goodness of the mixture seeps down through the rice. Yum. Love all your recipes. You explain them so well.
Another great recipe and appreciated the focus on the narrative, video, and the ( very) muted background music which is often a distraction for me at least. Really enjoy the frequency of great content and the ease of making wonderful dishes through your enthusiastic tutorials.
I'm a simple cook,I see chicken and rice I click because we ALL have it in our home's all the time. EDIT... I already know how to cook this 🤣, if you don't have a clay pot after it boils put it on the lowest setting on your cooker and take the saucepan lid and cover it with kitchen towels to absorb all the steam and it will come out exactly like hers... make sure it's on the lowest it can get on your cooker.
You can still cook this with a normal pot, just move it to the smallest gas ring set at the lowest flame possible after the liquid has reached a rolling boil. It may take an extra 10 to 15 minutes but you should get close to the same result. Oh and add in some dried salted fish, cut into small dice.
You can also bake it covered in an oven-safe saucepan at 350F for 20 minutes. Bonus if you have a glass lid, you can see when it is done. No fear of burning the rice since you have control of the temperature. Use 1:1.25 rice:water ratio.
Finally got around to making this today. I doubled the recipe and made it in a cast iron braiser. I also used 1/4 cup apple juice and 1/4 cup shaoxing wine instead of all shaoxing wine. It turned out great and would definitely make this again! Thanks Marion Grasby 🙂

I used to live in China and loved clay pot dishes; I learned to cook them myself. I will give Marion's version a spin in my dutch oven tonight. My humble clay pot is too small to feed the family.
I made this today using my Breville Instant Pot. I sautéed the sausage and chicken in the device then added everything as per recipe and cooked using the pressure cooking setting for rice. It came out perfectly although I did add more of the soy sauce and sweet dark soy sauce on tasting it for a more pronounced flavour. Delicious. Thank you.
I love all kinds of claypot dishes! I have a few claypots but when I am lazy I cook mine in a nonstick skillet. I cook the rice halfway then I top the rice with the ingredients, cover and cook 20 minutes. The best part for me is the crunchy bottom. Sometimes I cook the rice longer just to get the thick crust! Wit the nonstick skillet it just slides right out! Congratulations on the baby!

I have made at least 10 of Marions dishes and all are amazing Very flavorful and not salty. Which is something I always worry about with Asian cuisine. The chicken and rice dish was really delicious the rice was almost creamy the one thing I had a problem with was the top rice did not cook so it was very crunchy and I’m not sure how I would go about fixing that problem but overall I’d give it a five out of five stars

Coming from a vietnamese background, this is sort of comfort food mum used to cook, 🤗, you can also use the in a stream rice cooker too, in fact you probably get better results from a stram rice cooker!! It will cook everything slowly and you wont get a burnt bottom.. however it be "crispy" at bottom, like rice crackers and top will be moist and tender! Believe me, i grew up with mum ising this technique! 🤗👍
