Green water is the mixture of green coriander + mint + green chili +dry coriander and cumin powder + salt
Red water is turmeric + jaggery + dates

Pani Puri from regular places like restaurants around India will normally have similar taste but different local shops have different taste.

The one with yogurt is called Dahi puri chaat (or just dahi puri) and it's not spicy at all, its sweet and savory. They put yogurt and chutneys instead of water.

Paani poori can be overwhelming even for quite a few Indians. The thing is that the green water is one of the spiciest thing and thats the thing people go for it spiciness. But not all like me can actually handle that much hotness. So what is mix more of sweet red chutney than the green chilly water. Indian food is all about flexibilty in combination. One can always titrate the things according to ones palate.

No one eats panipuri like this....go to a local chat shop and eat there like most Indians do. Also you are adding water in Pani puri like some chemical, fill it completely don't worry so much. 🙂

Pani Puri is such a thing in India that every girl in India gets such a craving just by hearing the name of Pani Puri.And its water works like a medicine, it helps in digestion and eliminates stomach gas. Everyone's mouth starts watering just by mentioning the name of Pani Puri.If you are a foreigner and have tried it, it will be very different for you because it is spicy; spicy food is not eaten at your place Sweet water is also served with it which is water mixed with dates, jaggery and tamarind and both of these are prepared with various kinds of spices. ❤🙏

One advice: The quantity of water you got was quite less.
Next time, use a bowl filled with ur favorite mix of waters.
Key is to drench the puri in ur favorite flavored waters (each person shud have spicy or sweet or mixed flavors as per preference). It should be crisp and yet soaked. That Will give u the correct experience.

Such a sweet family party in the balcony. Nice video. It is so grateful of the food shop to send you a gift parcel.
But the panipuri is best enjoyed on the carts in streets. They mix it all for you and you can ask for less spicy, more sweet etc.
So, just in case if you want to make it or just want to know about it here is the description for you -
The Sev are made of gram flour and pea flour.
The Puri is made of Semolina.
The green water is made of Water, Mint leaves, green chillies, Coriender leaves, black healthy mineral salt, various spices mixture called Paanipuri masala that we usually get in shops in powder form.
The red water is usually made of Jaggery, dates, tamerind. It is supposed to be of warm sweet taste. Not this much tangy like you got.
The other fillings are experimented with warious lentils and cereals all over India. Basically yellow peas and moong are used. Mashed boiled potato. This ingredient is not supposed to be mixed with spices just boiled until soft with salt.
All this together gives you a multi flavor plus a healthy snack. You can drink a cup of that green water to cure cold and sickness.

If you find it difficult to make a hole in the golgappa, then flip it and try to make a hole from the other side, one of the two sides is soft and the other is hard, if you make a hole from the hard side then you can break the whole golgappa.
#little tip: If you are feeling spicy in eating any food then you can eat it by mixing curd with it, mixing curd reduces the spiciness and also gives a different taste, try it sometime.
Keep both bottles in fridge.let it be cool and mix the pani neatly and have both water in puri . Now you have pani you can purchased only puree packet ( pani puri puri only) it comes 100 or 50 per packet. So u can eat more n more bcoz you have pani with u

You can try Dahi vada ( though not sure if you get this a good one like of UP, MP, Delhi, Rajasthan), Dahi papdi chat, Aloo tikki chat, palak chat, chole tikki chat etc.
You visit Mumbai and try Pani Puri, Dahi Puri, Pav bhaji
Both liquids put in a pot mix very well then serv & enjoy it.

After so many sweets, the Panipuri was really needed to chear up your taste buds and appetite.
Panipuri is also known as Golgappe or Fuchka in different regions. Interestingly, Panipuri at every seller will have it's own unique taste. And every foodie will have it's own liking and favorite pani puri wala.
In Maharashtra, Mumbai & Pune are the best cities to have panipuri or any chat cuisine. Just look for the most famous ones.
The basic things in panipuri are just the puri and the tasty water.
The puri has 2 variants, one is made with maida, the other with sooji (semolina). The later is slightly thick and coarse. You can visually make out the difference.
That water has many flavors. In Ahmadabad city, many shops have 7 to 9 flavors of water, viz. hing (asafoetida), pudina (mint), adrak (ginger), lasun (garlic), jaljeera (mix of cumin + ginger + black pepper + mint + black salt + mango powder), kala khatta (blackberry juice + black salt + lemon juice + sugar), chat masala, sweet (jaggery + dates), sour (lime), hot (chili pepper), spicy (black pepper), etc.
The regular panipuri has two flavors of water.
One is sweet & sour. It's dark red in color. It is called 'meetha pani'.
The other is hot & spicy. It is green in color. It is called 'teekha pani'.
The sweet & sour generally has tamarind, dates, jaggery, chat masala, rock salt, black salt, etc.
The hot & spicy generally has coriander, mint, chili peppers, black salt, etc.
Some shops also serve that water chilled/regular/warm.
The garnishing items include, chickpea, mashed potato, bundi (it's the same bundi in ladoo, but with salty flavor), onion, coriander, sev, etc.
With so many ingredients, you can understand why it would taste different at every shop.
To have the actual taste, you should have it at the shop, made by the seller. Usually they ask you the level of hotness. There are 3 levels; meetha (sweet), medium, teekha (hot). You may go for the medium and then ask them to adjust the flavor to make it more sweet or more hot/spicy.
Rarely, but some shops do have just one flavored water, which isn't too hot/spicy.
In south India the chat cuisines are rare. But in general, in India panipuri is the favorite snack for everyone at any age. Especially girls flock around the panipuri stall.
A fun fact, usually girls like extreme hot & spicy panipuri than the boys. So at panipuri stall you would hear them saying "teekha banao bhaiyya" (make it more spicy bro) 😉
When your daughter said "more spicy this time", she rhymed with those girls 😂
Oh, and by the way, the one with curd is not panipuri. It's called Dahipuri. In Pune it's called SPDP (Shev Puri Dahi Puri). It will taste best if it is chilled.
Chat cuisine are available at many roadside stall/handcart. But always look for a chat stall that maintains good hygiene.

Try dahi wala(yogurt) pani puri in streets you will love it , always try in streets rather than restaurants or fancy places they are only hygiene that's all ,real indian taste comes from streets

Real way is to take water by filling poori by dipping into green water. Poori should be soaked 😍.

To reduce spiciness, you can add more milder items like sev and sweet pani and less spicy items to the puri. When you're trying this at a street stall, you can ask the pani puri vendor to make it less spicy so he can adjust the ingredients accordingly on the spot. Here's a tip: after finishing your pani puri, ask for a sukha puri to help soothe your burning tongue. It's usually free, so don't hesitate to ask!

Yogurt one is dahi puri and is not spicy however I would say go for raj kachori (It is like a single big pani puri) which comes with lots of flavored yogurt and it is not spicy as well. You will get that in Haldiram.

Than we fill it green n red water add some shev onion n eat
Ragada can be substituted with sprouts, or boiled potato etc rest remains same

Normally Puris are made of Wheat Flour, but in North India it is made of Suji
You can try less spicy option of Panipuri also...or you can add more boiled potato and boiled chickpea in to it for less spiciness.
