I love doing these cookies, and your right in that no one realizes they're keto. I made a batch of them and took 'em to the asphalt plant I was loading out of and passed them around to the other truck drivers. After they were all ate up and the drivers were talking about how good they tasted I told them they were keto cookies, they couldn't believe it and I had to show them the recipe. Now I get asked if I'm making more cookies soon, If a bunch of rough neck construction workers like them that says something.
I've made these a few times, but I use almond butter because peanuts cause GI issues (not allergic, just extreme discomfort). They're very good with the alternate butter, and I've made them with sunflower butter, too. I like them with either one, so I don't make them often....they're pretty much addictive, and being so easy to make, a huge temptation I indulge in only occasionally. So, so good!
I made your "Smarties" and used chocolate chips instead. I was thrilled with the result! Even my husband, who is very intuitive, said they tasted just like the old family recipe I had from my youth. This is certainly a keeper and I look forward to trying all your recipes! Thank you so much!
Best Tasting Peanut Butter Keto cookie out there! Slightly different recipe than what’s available AND about half the carbs! Tell me what you think! I use Costco Kirkland Brand peanut butter
I just made these and they are the best keto friendly cookies I have ever made! I would sat that of you are short on the allouse no worries they are very sweet so I would think you could get away with just 1/2 cup. These are not at all crumbly or delicate like most keto cookies. I decided to make 1/2 with Lilys semisweet chocolate chips . Both are perfect!
I just made half a batch to test it (and because I only had erythritol at hand). It’s delicious and crunchy! First time trying cooking using sweeteners. My husband prefers them to be sweeter (I’m married to an ant ;) )so I’ll increase the amount of sweetener next time. I’ll definitely be making more in the near future. Thanks for sharing. I’m learning a lot from you. I just got the ingredients for the flour mixtures delivered last night, so I’ll make my first batch today. I promised hubby some keto chocolate cake, with frosting and zero sugar.
@@victoriasketokitchen I am still going to try and go shopping. My chooks are all out of their organic ferment & I’ve been using shredded beets in it, but ran completely out. Wish me luck. (If I stick to the raw veggie isle, my appetite doesn’t take over so easily.) Making their ferment is no problem. I’m so excited. Three of the eight🐓 are now laying🥚🥚🥚again, and the other 5 are all squatting! (They show their hormone level has risen after molting by their combs/wattles turning bright red again, then start “squatting” for a rooster’s attentions.) Since I have no rooster, I fill in with a “quickie” massage on their flanks that I call a “floofing” cuz they immediately after do a silly fluffed-up dog-shake! But then come regularly back for a repeat when they’re in egg-laying mode! Pretty weird, huh? I love that I can easily tell which egg came from which pullet. I guess they’re called mature hens after their 1st Bday in March.🎉I’ll be swimming in eggs again by then, & trying to dry my own whites for your recipes?❤️
Finally made these cookies! I used the exact same ingredients that you used, same brands. The cookies are delicious! You don’t even know they are keto! Excellent texture and no weird sweetener taste. The other recipe had erythritol sweetener (not nearly enough), and I used a different natural peanut butter. Texture was dry and crumbly, hard to get down, and there was that cooling effect from the sweetener. Thank you for this recipe! Very happy with the result 😋
Also, it was worth seeing this recipe just to discover Costco organic peanut butter! It’s the best texture of any natural peanut butter I’ve tried. And I had to look at the label to confirm there was no sugar - it tasted so good! Maybe because they dry roast the peanuts? Thank you for suggesting it!
I wonder how this would be with a little of your AP 'flour' mix as an extender. Or turned into PB cake or muffins? Some chocolate chip cookie keto recipes add gelatin to the batch to give it that 'chew'.
These sure were easy. I would have liked them to be a little sweeter. I ended up putting a frosting of butter, PB, powdered sweetener and they were better.
The peanut butter you use will make a big difference. My dough was not crumbly and 3/4c is too sweet for me but from the comments for some not sweet enough
I just made these and they almost burned on the bottom after about 10 min. And they were not sweet enough and pretty dry. I used organic Simply Nature creamy peanut butter. And did not use the mat that you use for baking. I would not make these again. Also, are you able to state grams for ingredients when baking? I feel when baking precise measurements are crucial for success! Thanks
Google… allulose is subtracted from total carbohydrates because it is not metabolized and therefore causes no increase in blood glucose or blood insulin levels
All righty . . . Can hardly wait to make these cookies and have read all about the peanut butter. I am really sorry, (by the way, you are awesome!!!) I don't know if the Costco peanut butter (Kirkland) is more like Adams, Skippy, or Jif. Could you pretty please tell the good substitute. I have Adams natural which is also the same carb count. @@e.g.726 oh absolutely not a problem ok I’ll try to not be more confusing. So the Kirkland pb has 4 net carbs per 2 Tbs. The recipe calls for 1 cup which is 32 carbs and 16 OF THOSE carbs are sugar carbs. Not added sugars it’s organic peanut butter. Ok back to the math. It helps a lot that Allulose tastes exactly like regular sugar, too!
No ingredient tastes at all weird.
Victoria, because of egg allergies I made this recipe using 3 Tbsp aquafaba instead of the egg. The cookies were great!

Can I use almond peanut butter instead...from Costco...
Yes definitely
How are you getting 1.6 net carbs. I’m getting 9.3 with 19 cookies
