While other Durians should be ripe and soft to get the best flavor. The main reasons why some of Thai people like to eat a not fully ripe Durian are: 1.) The smell is not strong comparing to ripe Durian. Apart from that it's crispy outsde, chewy inside that's yummy for some Thai people. 2.) Our hands won't get dirty, it is easy to pick them up just like we pick up potato chips from a bag. 3.) Marketing, the sooner you hit the market in that season you'll get more money. Some sellers are too hurry to sell their Durians but surprisingly some customers love it.
