It really depends on what you are cooking and also your skill level some things can be thrown together to your own taste others if you don't measure certain things very accurately will completely distroy the dish. Like with most pastry cooking and breads if you have things off by even a bit you may as well just throw all your ingredients into the garbage because that's what you will get. Every other experienced chef will tell you the same. I've watched as entire rolling racks of bread have to be thrown out because the temperature of the room they were proofing in went to high or low.

Stroganoff is HUGELY popular in Brazil, and it's nice to see how different the recipes are. Here, instead of sour cream or mayo, we use light cream (half-and-half in UK, around 15% of fat) and, sometimes, a bit of cornstarch to thicken the gravy. We mainly eat over rice with a side serving of straw potatoes. Great thing about stroganoff is that is the best way to repurpose meat or chicken leftovers.

Yes you’re right Boris, everyone has their own Stroganoff recipe! Here in Sweden it include tomato purée and we often eat it with rice. One variant called Korv (Sausage) Stroganoff, you have Falukorv (~Doctor Sausage) instead of beef. Yes it’s cheap knockoff, but for poor families with many hungry kids it’s good food. Falukorv used to be made of meat from horse used in the copper mines near the city of Falun, in the region Dalarna. Nowadays it’s more of a mystery meat sausage, and it’s hard to find a good quality one. I bought some in a local butcher shop in my girlfriend’s hometown ages, it was the best sausage I ever eaten. Sadly that shop doesn’t exist anymore, and that was just before the CCCP collapsed. Still got the same girlfriend thou, she’s from Dalarna so she’s a keeper! Late regards from Sweden! P.S. I love your cooking vids, it’s funny to compare how different some of the food make but with almost the same ingredients, while some dishes are almost the same! I’m sure you learned by now, but your methods of frying meat in the video isn’t the best way. Then fried the meat, but not to much at ones and not for to long because then it gets dry and tough. Move the done meat to a plate and let em rest, and add new meat to the pan until all is fired. Never ever put cold meat from the fridge into the pan, it has first to get to room temperature before cooking. If you can only use cast iron frying pan and not a thin steel Teflon pan, those aren’t good for your health!

Rule number 0: you cut onion with really sharp knife, blin That alone helps a lot... you don't crush the cells containing the eye-watering sulfides and you don't get the fine mist of onion juice in your eyes, instead you actually CUT them and the juice is kept to the surface of the onion.

Ahhh, Stroganoff, one of my favourite dishes from my childhood. Although when growing up we couldn't afford beef, so we used sausage instead. It is still some of the best food there is.
Badfish3288 It looks fresh. The beef we get in the U.S. is old and colored to look fresher. The one in the video has the natural look of beef. I wouldn't be surprised if he got it from the butcher.
Looked like a piece of top round. Very lean but good for a dish like this. There's lots of butchers in America. And unless your buying complete shit from Walmart meat is never colored. Been a butcher for ten years in several places. Nobody colors meat. Also meat glue is sone fast food shit nobody uses that neither.

Bring memories, especially when You live in UK, where everything is shit (especially food) except salary ;) If You want to do something for Polish people in terms of food, make kotlet schabowy (pork chop dipped before frying in egg, flour, egg again and bread crumbs, obviously make it on the floor when squating) with potatoes and sauerkraut or pickled cucumbers ;)

Shuba is actually pretty easy, the easiest way too cook is known by every Russian mom or babushka First you gotta get some sliced herring pieces in sunflower seeds oil (back in Russia we buy it in flat, round plastic containers).I don't know if you have those in, uh, wherever you live, but without it you'll never cook shuba like a true slav.So, if you got what you need then you get Svekla (Russian word for beet) and carrot and cut them in small stripes.like, really small.Long and thin.Like fries, only 4 times thinner, ok?Then you get a bowl, put herring pieces at the bottom along with some onions (but you cut onions first, Da?) then you mix carrot and beet together and add some mayonez to it.(This mix is called "Shuba" which means fur coat.Yeah, so basically the dish is called "Herring under the fur coat", crazy huh?).When you did all of this just put "Shuba" mix on top of the herring (without mixing, to be more slav) and decorate it with some green onion. There you go! I hope you can understand me through my shitty grammar.

Stroganoff is very common in Sweden too. However, our version contains of ”Falukorv” (the Swedish version of Doctor’s sausage), crushed tomatoes, cream and some kind of onion. Mostly served with boiled rice or pasta.

This is literally my favorite dish. Although I love it with really thick, chewy pasta and peas. I will say I'm somewhat confused by stroganoff's popularity in the Midwest.
I can explain that. So a lot of German and Slavic Countries share a lot of the same dishes, this being one of them. Also add to the fact that a lot of the Midwest was settled by German, Russian, Polish, and Baltic immigrants, and there you go. Also is a very hearty meal and will also warm you up, because the Midwest does get pretty cold.

My fellow would-be gopniks and actual gopniks, rejoice! I scaled up the recipe a good bit, and made this delicious slav staple for my whole family. It was a resounding success! The potatoes I used were Red, though, not gold like boris, but tasted great anyway! I don't know how he does this stuff so fast though, the potatoes in my case were done for like 5 or 10 minutes before the sauce was complete xD But I even served with side of pickle spears, and everyone has enjoyed! For reference, Top sirloin steak cuts are a good bet for this recipe, not a lot of fat to trim, and the strips came out nice and tender. I also used a whole stick of butter and didn't bother draining off the excess. xD My advice though? Don't over salt it during cooking, if it needs more, just add to taste after it's done. And pepper is, in fact, a Must have. I'm going to try it with a little extra mayonez myself in a bit, but for now, I'm staying cheeki breeki and I suggest you do the same!

This is a very good recipe… just make sure to leave the bay leaf in there for a while, as that is what gives this stroganoff it’s flavor
Here in Sweden, we eat Goulash, Stroganoff and Kotlet other russian meals pretty often

Stroganoff is very common in Sweden too. However, our version contains of ”Falukorv” (the Swedish version of Doctor’s sausage), crushed tomatoes, cream and some kind of onion. Mostly served with boiled rice or pasta.

Shady internet man glorious, i used pork cause i couldn‘t find cheap beef but it was awesome. Just be sure that when u use pork some fat will melt and you might be horrified looking at it but it‘s normal.

protip: add shredded cheese alongside the sour cream.
Also, throw the bay leaf in during the mushroom/onion boiling for a deeper taste experience.
If he added cheese it would be the Anatoli edition not Boris edition.

This is literally my favorite dish. Although I love it with really thick, chewy pasta and peas. I will say I'm somewhat confused by stroganoff's popularity in the Midwest.
I can explain that. So a lot of German and Slavic Countries share a lot of the same dishes, this being one of them. Also add to the fact that a lot of the Midwest was settled by German, Russian, Polish, and Baltic immigrants, and there you go. Also is a very hearty meal and will also warm you up, because the Midwest does get pretty cold.

I scaled up the recipe a good bit, and made this delicious slav staple for my whole family. It was a resounding success! The potatoes I used were Red, though, not gold like boris, but tasted great anyway!
I don't know how he does this stuff so fast though, the potatoes in my case were done for like 5 or 10 minutes before the sauce was complete xD But I even served with side of pickle spears, and everyone has enjoyed!
For reference, Top sirloin steak cuts are a good bet for this recipe, not a lot of fat to trim, and the strips came out nice and tender. I also used a whole stick of butter and didn't bother draining off the excess. xD
My advice though? Don't over salt it during cooking, if it needs more, just add to taste after it's done. And pepper is, in fact, a Must have. I'm going to try it with a little extra mayonez myself in a bit, but for now, I'm staying cheeki breeki and I suggest you do the same!
maybe he better manages the heat of the pan since he done it so many times, or maybe his pot for the potatos is just inefficient in heating the water
