Neal l’m a Mexican American and you seem to amaze me. By using the ingredients that you use and especially by making homemade tortillas. Those quesadillas look so delicious. Great job and recipe. Have a wonderful day.
Same here..Mex/American. Grew up in E.L.A. and now in Florida. I miss the food in S. Calif where the best Mex food is made. It's even better than down in Mexico. The quesadillas look inviting and I'm sure taste wonderful. Question: what specific model is your Ninja blender?
Now I’m starving!!!! If I wasn’t doing brisket burgers this weekend I’d definitely be cooking that. A must do for next weekend👍🏻👍🏻. Stud pimpin’ that camo!!
Chiming in from Arizona. This looks like Tinga. Look up the recipe. I learned how to make this from a woman i work with. Fantastic on tortillas with cabbage, onions, cilantro and salsa verde.
Looks great Neal! I don't know why people think you can't use a tortilla press on a flour tortilla. You absolutely can Just as you demonstrated. That rolling pin is all you need afterwards. Very well done indeed!
No clue...in my comments doing the pork tacos...someone told me that...i just assumed...we just proved....that is a LIE...ahahahha like on a talk show...
Those looked fantastic Neil and Amy. Scared me at first about being too hot but then you cooled them down where they still had all the flavor without too much heat. Great recipe, thanks for sharing with us. Hope the girls liked them as much as you two enjoyed them. Stay safe and have fun. Fred.
I was thinking right after the first time you said the press wouldn’t work, maybe not all the way but for a good 75%. I need to try those. Chicken cooked in a crock pot is a gamble so I may throw it all in a bag and sous vide. Great recipe!
We have made that "shredded crockpot chicken" for years!!! It's so good and versatile for all kinds of things! We use it to make nachos, quesadillas, burrito bowls, etc. It's a great little recipe to have for busy week nights. I just put all the ingredients in the crockpot before leaving for work, set the timer for 4 hours and then it will switch to warm feature to keep it fresh until we get home from work. Thanks for sharing your rendition!
I enjoy your channel. I really liked it when you was teaching your wife to cook and when she turned the grill on it didn’t light and the reaction. It’s a good lesson for people just starting out on the grill. Keep up the good cooking
Nice vid. Looks way better than restaurant food. Think about getting the Vevor electric griddle so you can cook indoors your wife doesn't freeze. Like the crockpot addition. The two most overpriced items, if not more, in a TexMex restaurant are quesadillas and fajitas. Keep up the good content.
I feel ya on the crappy weather and the picky eaters 😂 17 bucks for a quesadilla is wild. I like the somewhat irregular tortillas each one is special like a snowflake haha these looked amazingly flavorful. Glad the heat got balanced out so everyone would eat. Great cook!
Happy 2024! Thanks so much for giving us the temp of the griddle top! - I use an IR thermometer all the time - takes all the guesswork out of the equation, and it's griddle independent. I'm loving your content and in-depth explanation of what/why you are doing things - very educational. - Cheers!
Another good video guys ! .i like and watch all you work. THANK you Frank from Montana.. ps. I am very fussy about what i eat , i have one rule it needs to fit in my mouth.......
Dairy products cut the spicy impact of the peppers. The steeping water is a good base for home made enchilada sauce, so don't throw it out. Or, make albondigas soup with it.
Great recipe--you guys seriously have the best! You can also use Rick Bayless’s Barbacoa packaged mix if you are short on time! I add a can of mild rotel, one chopped onion, the sauce mix and the chicken into the crock for 3 hours on high. You could make tacos or quesadillas! His mix is pretty clean ingredients! My husband has a meat allergy so chicken is allergy we can do-but this is pretty awesome! Love your channel!❤
Another recipe you might like to try is what I call Hawaiian burgers the recipe consist of hamburger meat, crushed pineapple, whole can jalapeño pepper, one large onion and that was 3 pounds of burger makes about nine big patties and wrap your patty in the thin cheap bacon. It is awesome.
I use a tortilla press all the time with flour ... The whole thing you got to pay attention to is temperature if it's cold they're going to snap back so I keep my dough in a warm oven in between rolling
Super impressed with this cook my guy 😉👌! Like I always say, Fresh homemade “Torts” is Always the way to go…. No doubt about it!! I also was thinking the chicken was going to be spicy, but by doing it the way you did I was confident it would tame down after. I dig the switch up with the crockpot cook, hopefully you can do a mini series 🤞🤞. Spot on with these quesadillas Brotha, spot on. Cheers y’all 👊🏼😎🤙🏼
What I learned from researching how to make the best flour tortillas from Mexican professional tortilla makers (Stefanie from Views on the Road and a deep dive by Ethan Chebowski). The weight of flour in grams, 25% fat (your choice high quality lard, bacon grease, butter), ~50% hydration (water). Knead until smooth, rest dough minimum 30 minutes, portion balls, rest another 30 minutes, roll tortillas and cook on hot surface (comal, cast iron skillet or griddle)
Looks fantastic! I got a griddle press similar to yours, corn tortillas were fantastic, flour ones were bland and tasteless, I used everyday flour, some say to use like a bread flour. I used butter also in mine. What kind of flour did you use?
They really like em...said just as good but they like the other tortilla better...I agree...just something about a perfect tortilla...I cant tell with out having a side by side comparison
Great video Neal. I appreciate you and your wife's cooking videos. Happy New Year to you and your family. God bless! Oh, by the way have you seen the new Weber Slate griddle?
Could have had the kid there to try... Great cook again...

Looks great Neal! I don't know why people think you can't use a tortilla press on a flour tortilla. You absolutely can Just as you demonstrated. That rolling pin is all you need afterwards. Very well done indeed!

I love this idea but I will use my instant pot for the chicken. This looks so good I don’t want to wait hours. Awesome job man I love it
Hey @dannyvanover8413 I thought the same thing, Would you put the peppers in with the chicken?
@timr135 yes I would.
I love my griddles and Quesadillas, so I will certainly be trying this one. Thanks for all the awesome videos.
Absolutely...thanks for watching
Yummy
Going to make these this weekend. I made the pineapple pork tacos they were awesome.
Heck yeah....thanks
I was thinking right after the first time you said the press wouldn’t work, maybe not all the way but for a good 75%. I need to try those. Chicken cooked in a crock pot is a gamble so I may throw it all in a bag and sous vide. Great recipe!
Heck yeah....heck even if I was just 75% anything hahahaha that would be better...did you guys get hammered with snow...we have 9.5 inches

This looks GREAT! Great deconstruction of your favorite Mexican restaurant's version :)
Thanks so much!
That's a great quesadilla! I gotta start making my own tortillas😊
You should! they dont last long after you make em...but so much better....

that does sound good...thanks
If Chud's would ever get their press back in stock I'd buy one for this one thing alone.
check out TMG PIts...
I use a tortilla press all the time with flour ... The whole thing you got to pay attention to is temperature if it's cold they're going to snap back so I keep my dough in a warm oven in between rolling
Great tip! Thank you...

Hey Neal where you buying your Chile's in bags from. Thank you for all the great content.
some from our local grocery store...some from amazon...I have links listed below the video for those

You can add honey if to spicy. Looks good though

Looks fantastic! I got a griddle press similar to yours, corn tortillas were fantastic, flour ones were bland and tasteless, I used everyday flour, some say to use like a bread flour. I used butter also in mine. What kind of flour did you use?
Just an all purpose...
You can press flower haha
Don't think of it as...rain or sleet. Pretend it is the sound of...APPLAUSE!
A bunch of cheese and meat, that’s my kind of tortilla!!!
Amen..
Wait, so which one was better?? Precooked or raw tortilla?
I think the double cooked edged it out...just by the chew....
What’s the new mixer that you made the dough with? Regards, Tony
Probably a Ninja
I think it was a Ninja. I got one from my son for the holiday, which looks really similar. Works great
Great question 👌
Ninja Blender and Food Processor.....
Thanks for your reply….love the channel, gives me ideas to try….
I would love to make this but I think it will have to many moving parts for me
So what was the verdict from the girls??? better, worse, just different?
They really like em...said just as good but they like the other tortilla better...I agree...just something about a perfect tortilla...I cant tell with out having a side by side comparison
Well did the kids like it?
I would like to place my order? Do you deliver to Michigan or is that to much?? 😂

Which one was better?
I liked the cooked then cooked again...just a hair more chewier...
