- This vibrant pastel-green, light, and fluffy pistachio layer cake is flecked with ground pistachios and flavoured with just the right amount of pistachio extract. It's absolutely divine! This cake is perfect for any holiday like Christmas, St. Patrick's Day, Easter, etc.

• Pistachio Chiffon Cake...
Ingredients (6 x 3 inch loose base cake pan):
Pistachio Chiffon Cake:
50g pistachio spread or pistachio paste
50ml (1/8 cup + 4 tsp) full fat milk
30ml (1/8 cup ) vegetable oil
60g ( 1/2 cup) cake flour
2.5g (1 tsp) corn starch
1 drop green gel food colour (optional)
3 egg yolks (eggs with shell weight 60-65g each)
1 tsp vanilla extract or pistachio extract
Meringue:
3 egg whites (eggs with shell weight 60-65g each)
1/2 tsp vinegar
60g (1/4 cup + 1 tbsp) sugar
Bake Time : Preheat the oven to 150C and bake for 60 mins
Pistachio- Almond Crunch :
100g pistachio
50g of whole almonds
100g of sugar
25ml water
Whipped Cream Frosting:
600ml whipping cream (cold)
50g icing sugar (adjust sweetness if needed)
1 tsp vanilla essence
1 drop of green gel food colour
White Chocolate Pistachio Drip:
120g white chocolate chips
80ml whipping cream
45g pistachio spread
1 drop green gel food colour
