This has become a favorite in my home. Sometimes I got too much filling left over, so what I do is I make little balls, cover them in bread crums and fry them and serve them with tomato sauce. Delicious!
I followed how to put the eggplant together but slicing the eggplant was a real challenge for me. I either need a better knife or buy an eggplant a different shape and weight. Yours were cut perfectly!

Made this dish last night. Never tried the baked eggplant method before- always breaded and fried them. However, my daughter is a healthy food eater and I figured this was a better choice for her. Was worried the eggplant would be hardish (not cooking through), However, I was wrong! The slices were perfectly soft, without the usual over saturation of grease and extra calories of bread crumbs. Mr. Orsara to the rescue again. My boys/men thank you... and there are 8 of them, so that is a lot of thanks....lol
With this Coronavirus it is a blessing to be able to watch videos like this and try out recipes with your family and share with neighbors. Providing that you know that you are healthy. We made the eggplant meatballs and added spaghetti. It was easy but most of all soooo very delicious! Thank you Chef Orsara!
Just made this for my wife and her sister this afternoon. It was very easy to make and she just loved it. Although I used quite a bit of sauce, I found that it dried up too quickly at 400 degrees. Not sure if the oven should be set to a lower temperature. To save it, I added a little more sauce after the 30 minutes before topping it off with mozzarella cheese. It was delicious. Can't wait to try some other recipes by Chef Pasquale. He has such an extensive list of great videos making it hard to decide what to make next.
Same here but second time I made it,I lowered my oven to 200 degrees and cooked it for 20-25 minutes just until I know the eggplant is cooked. Fillings don’t take long. It turned out so much better.

I use an old hand meat slicer to do eggplant, zucchini and pansetta and other cured meats. I've owned and babied it for 47 years after picking it up at a garage sale for five dollars. Best least expensive prep tool I ever bought.

@@joyvalente5413 Have you heard of a mandolin? Google it if not!! They can cut uniform slices but you need to be careful when using it!!

Yep it's the same stuffing. I just add 1 more egg for that amount of cheese for a firmer filling. And no salt, the Romano is very salty.
