Cold Smoked eggs are simply amazing and are so easy to cold smoke in any cold smoker. All you need to do is sort hard boil 6 eggs for 7 minutes, cool, peel and cold smoke them over your favourite wood for anything between 4 to 18 hours. You'll be surprised about the colour and the flavour of the smoked eggs.
I made a smoked egg mayonaise sandwich with chives and lettuice which war really nice.
Egg mayo
2 smoked eggs
4 tbsp. Mayonaise
small bunch of chives finely chopped.
Mix it all together and layer it onto bread for a delicious sandwich you'll want to recreate again.

I have never had egg salad with smoked eggs, but will try it. I've been cold smoking eggs for deviled eggs, and several types of cheese.

@OEFveteran2010 Quail eggs take 3 mins to hard boil. smoke below 30c for a few hours👍

To prevent eggs from bursting, pierce the bottom of the egg where the air sac is. We have a cheap little gadget that does this.

Seems perfect smoked eggs 👏 but what are you using industrial mayonnaise killing the taste of these sublime eggs, doing yourself your mayonnaise will change definitely for better thins already great recipe😉
I have to agree, i do make my own but i also know many people don’t! and even with the shop bought version it tastes good 👍

I brine mine after boiling and before smoking. It stops them from becoming rubbery and gives a hint of salt.

i really like this idea, boiled eggs can and do dry out really quickly and leaving them in a brine beforehand is an epic tip. im guessing this would be a weak brine????
@@Coldsmoking medium brine for ten minutes is what I have been using.

My only concern here is that generally it is recommended not to leave a refrigerated food out for more than 2 hours. Now I know smoking might effect this as it is a kind of way of preserving food, but I wonder if there is any science on this and if it changes the 2 hour recommendation. Anyone know of any literature?
boiling the eggs beforehand sterilises them, adding smoke provides an environment which inhibits surface bacterial growth. some add a light salt brine too adding protection. id like to see the reasoning for the two hour rule but i think this relates to food left out as on a buffet etc and not undergoing a smoking process.
@@Coldsmoking I dont know the reasoning behind it but I believe it comes from the FDA in the US.

Very nice in an egg mayonaise sandwich. It's the colour of them as they come out of the smoker that freaks me out.
Oh no, looked great untill you used shop brought mayonaise, it would of been so much better with home made, i'll try it.
im guessing you would make it with eggs and oil and thats all good. I’m more focused on the smoked egg tbh 👍
