How to Make Brown Sugar Boba Ice Cream Bars with SOFT Pearls
Вставка
- Опубліковано 28 вер 2024
- The Brown Sugar Boba Ice Cream Bars have been quite the craze, and as the weather gets warmer they are going to be in high demand - even with the exorbitant prices. We set out to recreate these Brown Sugar Boba Ice Cream Popsicles and we think we’ve got it. This was a lengthy experiment, with the most failures we’ve ever had… we stopped keeping track, definitely above 10 tries. Anyhow, we’ve gone through all the trials and tribulations so you don’t have to. Hint: the trick is all in the flour used to make the bubbles. Without further ado… here’s how you make Brown Sugar Boba Ice Cream Bars at home - from scratch!
Ingredients:
Boba / Bubbles / Pearls (however you fancy it)
- 1 cup Glutinous Rice Flour; plus additional for coating
- 1 cup Brown Sugar, Taiwanese version preferred
- 80mL Water, Boiling
Ice Cream
- 2 cups Heavy/Whipping Cream, Cold
- ¼ cup Condensed Milk, Cold
*also chill the mixing bowl
Brown Sugar Syrup
- ½ cup Brown Sugar
- ½ cup Water
- 1 ½ teaspoons Cornstarch mixed with ¼ cup Water
Recipe
Boba / Bubbles / Pearls
- In a large heatproof bowl add in glutinous rice flour and ½ cup of the brown sugar. Pour in boiling water, mix together with a spatula immediately. Fold together until all the flour, water, and sugar combines into a sticky dough.
- Being mindful that the ingredients may be hot, pour out onto a surface and knead until everything comes together and a soft spongy dough forms. It should not be dry or too wet and feel like very soft Playdough.
- Cover the dough in plastic wrap while making the dough balls. Prepare a bowl with a few tablespoons of the glutinous rice flour for the rolled balls.
- To make the balls, pinch off a piece and roll in your fingers or hands. These balls should be smaller than 1cm or ⅓ inch in diameter.
- Place the rolled ball into the bowl with glutinous rice flour. Carefully toss, mix, or stir the bowl every so often to ensure that the balls are nicely coated and don’t stick together.
- Bring a medium to large sized pot to a boil. Sift out any extra flour from the bubbles. Add the bubbles into the boiling water.
- Boil for 3-5 mins or until all are floating and soft.
- Heat a wok over medium heat. Add the other ½ cup of brown sugar to the wok. Add in the bubbles and stir constantly. Cook until the sugar has melted, caramelized, and it’s dark brown in color. Adjust the heat accordingly, don’t allow it to burn.
- Pour out into a heat proof bowl and set aside.
Sugar Syrup
- Heat a wok over medium heat. Add in ½ cup of brown sugar and a ½ cup of water.
- Stir constantly until sugar is melted, caramelized, and a nice dark brown color has formed. This should be a medium thickness in syrup.
- Turn down the heat, add the cornstarch slurry. Bring the heat back up, stir until a medium to thick syrup has formed. Set aside to cool. Once cooled, pour into a squeeze bottle.
Ice Cream
- Make sure to start with cold ingredients. In a large bowl, add the cream, mix with a hand mixer, or by hand until soft peaks have formed.
- Add in the condensed milk, continue mixing until well combined and not yet to a stiff peak.
Mould:
- Fill a piping bag or large ziplock bag with a mixture of ice cream and bubbles. To make life easier, I like to put my bag inside of my blender or tall container with the top folded over the edge. I layer a few spoons of ice cream and a spoon of bubbles. I then squish the mixture to disperse the bubbles throughout. Alternatively, you can just add the bubbles into the ice cream and stir. Then fill the bag with the mixture.
- Line the outside of the mould with some of the brown sugar syrup using a squeeze bottle. I like to do a thick layer at the top and allow the ice cream to push it down.
- Cut one corner of the bag and pipe into the mould, stop about ⅔ of the way. Tap the moulds on the table a few times to get rid of any bubbles. Continue filling the mould.
- Leave a little bit of space at the top for the popsicles to expand. Stick in your popsicle stick about ¾ of the way in.
- Tap moulds on the counter to remove any air bubbles.
- Place into the freezer for at least 6 hours and ideally overnight.
- To remove from mould allow to sit for a few mins on the counter.

Why because I'll eat it all? Hehe.
(I know it's so you don't burn your tounge.)

You were my favorite with Off the Great Wall back in middle school. I’m glad to see that you’re doing well and making great content!!!
Aww thanks! Glad you found this channel.
I’VE BEEN LOOKING FOR A RECIPE LIKE THIS EVER SINCE I FINISHED MY BOX OF BROWN SUGAR BOBA ICE CREAM thank u
Hahaha yes! We all have the same problem!
ITS SO GOOD BUT ONLY A FEW IN A PACKAGE ;w;
😢😢😢
Whenever I go to the store, there always sold out or there’s only one :(
One is good.... how many did you wanna buy?
i made this and it was so good! i lost my popsicle molds so i ended up just putting it in a airtight container but it is really yummy!!
Glad you enjoyed it!!!
Thank you for this, I honestly love boba and especially this ice cream but it's so hard to find in stores and online is so expensive other videos on how to make this doesn't really do the job
Thanks for watching! Plz let us know how it turns out!
I tried out the recipe and it was a HUGE SUCCESS!! It was so delicious!!!
So glad it worked out for you!
omg the clip to close the bag is such a genius idea thank you for this!
Glad it was helpful!
This is my FAVORITE ice cream lol I just recently bought a box for $7.99 in my area....
Baller!
no joke i got some for 3.99 a box
That’s a great deal!
Michelle L where do you shop
Must be nice. In my area it’s $15 a box 😭
I am so excited! I have been mulling over the Boba store bars for months....on a tight disability budget and try not to let my taste buds get the best of me in the store. I am so excited to see this! Thank you so much for all your efforts to recreate this! I have never tasted one but I know that it will be something I will absolutely Love! Hope you both have a wonderful day!
Cute! The ending was funny when he said the bubbles and cream came out together. 🤣
Thanks for watching all the way to the end!
I love how descriptive you guys are. Only thing I feel like was missing was telling us how much water to pour everytime you mixed something with water
if you look at the ingredients of the boba bar it lists mochi, but thank you for taking one for the team experimenting 😂
Lol!! That was one of the first thing we read. I need to go double check if it says mochi we needs to kick ourselves. It’s ok. We figured it out eventually.
I was gonna comment the exact same thing, dang ya beat me
You know what’s funny? I went back and checked the label. The sticker they put over the original didn’t say mochi just tapioca starch 🤨 the original label does say mochi. Lol... would’ve saved us a lot of time if it wasn’t for the damn import label.
@@KindofCooking You are experts at making boba now!! So it was totally worth it :)

These ice cream looks so yummy! 😋😋
hehe they were tasty too :)
Thank you for testing! Really appreciate it :)
Thanks for watching!
Can we use the boba for boba tea? It seems easier to make than the tapioka ones
We’ve done it. It doesn’t taste exactly the same though.
I’m eating one right now
Brown sugar ice cream bars so good
So good!
I've actually been planning to make these for a while and I was planning to use the mini Mochi that they sell to put into frozen yogurt
That should quicken up the process a lot more!
Hi. New subscriber here. I loved your video. Thank you for the recipe. I love the boba ice cream and I totally agree with you on the price of 4 ice cream bars.
Thank you or the support! FYI, I don't know where you live, but I saw they are selling at costco $10 for 12 or something that's a much better price ;)
I have to try this!
Plz let us know your results!
Oooh, thank you for all the tips!!
I have an ice cream maker so I think I'll try the brown sugar boba part & toss the rest in my standard vanilla mix! (I cook my base stovetop because its essentially a custard)
Has anyone brewed black tea into their ice cream before? Did that work well?
I often eat the popsicles in Taipei city Taiwan.
It will probably be cheap in taiwan!
@@KindofCooking Absolutely! It's more inexpensive.
Would I be able to put this in a pint container and eat it as regular ice cream in a tub or do I have to make popsicles? Thanks :D
We ate is as ice cream - it helps to leave it out for a bit to let it soften before eating it
@@KindofCooking thx
i saw one box of these bars for ONE. HUNDRED. DOLLARS. thank you so much for this recipe!
...where?? 😱
Kind of Cooking - Sous Vide, Recipes, and More ebay😳😳
I have so many questions on the logistics of this. Hahaha
I just buy bags of dried boba & boil them so it's going to cut down the steps quite a bit! I love boba popsicles but they're pricey & hard to get, plus i have so many Daiso popsicle sticks that never get used haha
You're right. It's probably worth it to buy from the store. It's very labour intensive!
Yep. haha time is money, money is time. Need to choose what's more important haha
Carmen: The bubbles aren't that hard after you get the hang of it.
Thank you so much for this recipe! I enjoy watching the two of you so much - totally complement each other, great energy too!
I tried to make the boba, but my “dough” was really runny 😭 I made sure to use glutinous rice flour (the green pack shown in the video) too. Any tips? Thanks in advance!
How much sugar did you use?
In grams, it should be 100g flour, 50g sugar, and 80ml water.
thank you for trying the recipe and the kind words. Let us know if you have any other questions.
Thanks for your quick reply! I used 1 cup of flour, 1/2 cup of brown sugar, and 80 mL of boiling water.
Hmm. That’s the right ratio... try 10ml less water. What type of brown sugar are you using? Ours was slightly dryer and sandy. I’m curious if the grams=the same in cups. We converted it by measuring it and testing it ourself. Out of curiosity, what region are you in? The dough should definitely be shaggy when starting.
ua-cam.com/video/6scx2vD5R4w/v-deo.html she has a great recipe for boba, i tried it and it works great
Have you guys tried tapioca starch or cassava flour?
Babs Taklamu tapioca starch, yes - unfortunately, becomes super hard in the freezer, but it’s great for regular pearls. We have a video for that one.
Have not tried cassava flour.
Ya
I poop
I made this yesterday and it turned out quite well other than my syrup being too runny to create the marble effect (not a huge deal) and my pearls being quite hard. I was still able to chew them but they were harder than I expected! Any idea why?
Thanks for trying! The bubbles aren’t as soft as you would get in the store bought. Ours wasn’t hard at all but had a bit of a chew, like yours. In our research there’s a special chemical to keep it super soft, it wasn’t something home cooks can get.
Love thisssss ❤️❤️❤️
Thujhhbr Harry thrtuuiooor
For those who made this, about how many popsicles were you guys able to make?
After u freeze or refrigerate it u can reboil it works even better :)
Which part are you referring to? Would love to try it if it makes it better :)
Kind of Cooking - Sous Vide, Recipes, and More just like cooking the boba in general
So you cook them, then freeze them, then reboil them?
Kind of Cooking - Sous Vide, Recipes, and More I refrigerate and then boil if I have leftovers I didn’t use instead of throwing them out
I was thinking making regular boba milk tea, put in blender and freeze
I don’t fully understand your process. What does the blender do? Curious to know.
Question: How many Popsicle this recipe will make? How many mode I need to use? If I only have 6 modes, can I consume the ingredients? What should I do?
It makes 10-12 popsicles. For our leftover we just put it in a freezable container and you can have it as a scoopable ice cream!
Do we have to use condensed milk?
No, you can make ice cream whichever way you like. We used condensed milk because it’s the easiest way.
unless u have a good majority of these items it’s more expensive this way
A high calorie pop, but must be yummy!
Worth it!
Its $5 at my local Ranch 99. What I dont understand is why there is extra space in the box like there was supposed to be more in there.
YES! Why make such a big box?? False hope 😒
Why did you choose glutinous rice flour over mochiko?
That’s what was available at the supermarket we were at.
Kind of Cooking - Sous Vide, Recipes, and More Is one more preferable?
The boba in my ice cream bar is very hard, is this because I am using the Thailand version of the green package rice flour? If I use the Taiwanese version of the rice flour, would it still be very hard?
hmmm let me look into that. It is harder than what you would find in store, but shouldn't be breaking your teeth. We usually let ours sit out for a few mins before eating them hehe.
@@KindofCooking I see, so let the ice cream bar sits out a few minutes before eating it.
Can I use different kind of mold if i dont have a popsicle container? And what kind do you recomend? Thank you!
For the extra ice cream and boba I just put them in a container and froze it as is. It will be good as a scoopable ice cream 😉
Thank you so much for your reply!@@KindofCooking

That's the most important part of the video... well actually the following hahah don't try to lick it when it's hot.
If anybody wants one they're gonna have to make it; cuz apparently are pretty hard to find. It's prolly why the price is $9/box.
LOL! Supply and Demand
Can i use regular store bought boba pearls and just put them in rice flour or will that not work??
No because the boba itself is made of tapioca flour and they will turn hard after they freeze.
if you dont have a popsicle mold can you just use a container?
You have a few options. You can partly fill a container and stick a stick in, or just scoop it as ice cream. Someone actually did it today by partly filling the bottom of a cup. You can see that featured in our Instagram story today.
How many bars does this make, I’m gonna need quite a few 😳
We were able to make about 12 bars. Lol better start rolling
My mum uses the smaller bobas and they don't go hard!
Are they sago?
In Hawaii it’s $13 for one box
Supply and demand or daylight robbery?
How many does ur recipe make? I couldn’t find it on the page?
10-12 bars. Depending on your mould size.
Are you guys Cambodian, Thai, or Vietnamese?
No, no, and no? Lol. Try again!
Any replacement for cornstarch?
You can try using tapioca starch. you can also skip it all together, the corn starch just makes it easier to deal with to squeeze out.
It’s $6 in my area
Score! Lol. We are at like 10 for 4
what kind of brown sugar do you use?
Taiwanese brown sugar. But you should be able to use regular.
im watching this while eating brown sugar boba ice cream lol
It knows 😳
Fusion asain crawfish
That would be an interesting one. You know, we never really got the hang of crawfish. Going to need to try more, we are always disappointed in the amount that comes out. When we do a family "boil" we always go shrimp hahaha ... my parents would freak out at the amount of work required for them to eat crawfish.
i followed the recipe but still ended up with hard bobas. maybe they needed to be cooked longer than 3-5 minutes?
😳 not cool. Hmm let’s try to problem solve. what type of sugar and flour did you use? How long was it in the freezer for? And how did you Let’s see if we can find something. They aren’t as soft as the ones you get in the shop, but they should still be chewable.
could u guys recreate alien mochi from disney land?
Hmmm. I’m going to need to get to Disneyland first. But will look into it.
Thank you for your public service. Liked and subbed.
I will now gain 20lbs.
Lol! Yep. That’s what happens. Thanks for the support.
Ahhh this looks so good but I’m on a sugar diet because of my eczema. So sad
Wait. You're on a sugar diet? That means this is prefect for you. I'm just kidding... I know you meant non-sugar diet. Sorry to hear that though.
Interesting video, but with the cost of the ingredients and time I have to put in, might be better off for me to buy it at a little over $2 a bar. I eat maybe 2 bars a week at most.
It’s a good quarantine activity 😬
$6.99 here and I thought that was expensive already but..$9?!?!?! Tiger Sugar was $9
I know 😭
No 🧂 salt
I had to :(
Got yourself a sub. :-)
Pls reply; can u just use store bought ice cream instead of making my own?
Lol yes you can. You’ll probably need to melt it down to mix in the bubbles. Or spoon it it layer by layer.
🤤
I just ate this 5 min ago, I’m not even subbed or into this stuff
was it good😳
i said i was gonna get some boba ice cream and someone who literally said they were aSiAN thought it was disgusting- i have no words
don't even know what to say to that ... but haters gonna hate.
p
man, that is a lot of work... i'll pay the $9.. LOL Great video as always guys!
Hahaha! 9 dollars for 4! Lol it’s like 3 bites. It’s more than a dollar/bite. Just kidding. I guess the time I spent to figure it out I could have bought many more lol.
It’s actually not that bad once you get the hang of it. These pearls are already much easier than the original tapioca pearls. - C
you can get one of these for a dollar at 7-11 in hawaii 😂
Lucky you!
She sounds like the girl Rae from make it fancy
Haha really? I don’t hear the resemblance. Maybe I just got used to her voice lol. Thanks for watching!
💜💜💜💜💜💜💜💜
ok ngl my fridge was stacked w the bought ones even before it was trendy and kinda getting sick of it
LOL fads come and go. That's how the world works. How many packs do you have left?
9 dollars ain't that bad.
hahhaa after seeing all the steps, hehe maybe not. But you gotta do what you gotta do when there's a shortage :P
I bought that icecream package just only for 5.99 dollars, not 9 dollars :0
Where are you? It’s time to move there lol.
How much water did you add to the corn starch for the syrup?
1/4 cup
5:32 when he says a teaspoon and a half of cornstarch but he doesn’t level off the extra so ~2 teaspoons of cornstarch?
Iris the spoon I’m using in the video is not a teaspoon. The exact amount of cornstarch is not that important for this recipe, as long as it’s enough to make a slurry.
Cooking is not a exact science
I’m here bc it’s $13 in my area 😂
Supply and demand or daylight robbery?
Kind of Cooking - Sous Vide, Recipes, and More Price gouging because it’s popular lol but now that everyone has tried it, it’s fully stocked and on sale.. just by $1 though 😂
I'm 1st 😮. Looks good guys!
🎉🎉🎉🎉🎉🎉🎉
Thanks for watching!
