Hi Jess, thank you for your lovely Videos. As a German I have to add Dutch babies also have nothing to do with German cooking. The closed thing we have to Dutch babies is Quiche. Real German pancakes are more like French Crêpes. Germans normally eat a lot of bread or cereal for breakfast. It is very uncommon to have a cooked breakfast. Germans mostly have pancakes as a sweet lunch or savory like an omlette. ☺️ Merry Christmas from Berlin to you all ❤🎄

I think it may be a German American dish . As a German I've seen many people calling these German pancakes and I thought maybe it a regional dish? My family is from the franken Bayern area. And our pancakes are like you said french crepes

Did you ever hear it called fankurshin? That’s a phonetic spelling. Gramma didn’t write it down, I copied her recipe as she made it. We ate it more like a dessert or treat.

@@marigoldmeadowsfarm7495 This sounds like the German word Pfannkuchen which is in English pancakes. So I guess it is the same. You can eat it as desert, but it is very filling 😊

I finely chop left over potatoes (fries, tots, home fries) or if I have whole potatoes I will grate them. Add salt, pepper and anything other seasoning you want. Melt some butter and drizzle in your potatoes. Stir well. Mixture should be a little pasty-like and hold together when squeezed. (You can chop/mix this in a food processor if you have one). Place potato mixture into a greased pie pan. Press the mixture in the bottom and sides of a pie pan. Par bake your "crust" for about 15 minutes (while you're putting together your egg custard). Remove crust from the oven. Add egg custard and return to the oven. Bake until egg custard is set. Play with it. Make it your own. Enjoy!

My "egg pies" are never the same because I open my frig up and say what do I have in here or in the garden that I can add. 😊 sometimes I have a crust, sometimes not or if I have left over potatoes I'll shred them and line my pie pan with basically hash browns. Great easy laid back breakfast/brunch or supper. Love breakfast for supper ❤ ~ Rhonda

one of our favorite quiche/frittata ( with or without the crust) is roasted peppers - either from scratch or from a can and cheese. It tastes like a chile rellano. I also do huge batches of caramelized onions in my crockpot…put them on early in the morning and let them go for hours. They smell so good and freeze beautifully.

Best quiche ever is the Heirloom Tomato Tart. A layer of pesto kicks it up, and any white melty cheese (though my favorite is Gruyere), fresh basil and oregano, and a top layer of lovely summer tomatoes sliced thin. I dream about this one in the winter...

My grandma was a Black Sea German, raised in North Dakota. She made a dish we called fankushin. I was raised in California & don’t speak German so I know it’s misspelled. It was like your recipe but she baked it in a cake pan & we ate it like a dessert with pie filling or berry syrup…she made wonderful creamed cheese fillings for it also.
My favorite foods she made were her stuffed cabbage rolls & a wonderful treat knipfla. It was a noodle boiled with potatoes & then fried to a yummy golden brown crunchy goodness. I guess it’s a knipfla kind of night on the farm tonight!!!

Hi Jess - I had to cut out any excess sugar and discovered, to my delight, that just cooking down blueberries in a little water makes a wonderful topping for meats and pancakes or a mix-in for yogurt. We call it "burst" berries and it works with strawberries, raspberries, blueberries - pretty much any berry-type fruit. The fruit's natural sweetness comes through, while maintaining all the fiber and without spiking blood sugar.

I have two favorite quiches I make. The first is a smoked salmon quiche. I usually just use a gluten free store bought crust as a busy working woman. But the key is in the quality of the ingredients. Basically sauteed onions, Finley sliced red peppers, garlic and smoked salmon with whatever cheese you want in moderation but and then dotted with cream cheese and a little cayenne or paprika. Smoked salmon is very salty so not much salt is needed. I always like a little parsley on top of just about anything. The second one is a crab quiche. Which I only make in the winter here in the northwest when it's in season. Although we do go crabbing here in Northwest whenever we can and a crab quiche is always a
a great thing. Wonderful recipe that I have uses dry Sherry and a tablespoon of tomato paste as well as shallots and some lovely French cheese that I don't know how to spell that starts with a G and rhymes with free air. Thank you for all your beautiful videos and recipes and You appreciation of everything that's wonderful in life and most difficult sometimes expressed in a most beautiful way.😢😅😂😊

My family is divided between cheese and bacon quiche or veggies in quiche, but it never goes to waste. I cut up when cooled, leave in containers in the refrigerator and it’s a delicious grab & go breakfast for the morning rush. 😊

I bake my thinly sliced onions on a cookie sheet with butter and oil until they get nice and caramelized. It’s easier than standing over the pot/fry pan for 45 minutes.
I also wanted to comment on using sour milk products in your food. I think it is much better for you. The enzymes and good bacteria in the “fresh” sour milk are things our body needs to help our digestion. So if you have cows, you’re lucky! go for it! Unfortunately I don’t have a source. But if my store bought milk products sour, I still use them. As you said not for coffee lol. I make Dutch Babies as well. I add fruit in the bottom of the pan with butter such as apples or pears. I call them apple puff pancake then. Plain are still called Dutch babies.
    Thanks for another great video!

Carmalized onions: I cook them in a slow cooker for 4 - 6 hours. I still stir them a few times. Takes longer, but less onionsitting 😉. Easier to add it to a multitasking kitchen day or to start early in the day to be ready for dinner.
For a fancy flavor I like Leeks & artichokes.
For a more traditional, ham, cheese and a little grated onion. I mix a bit of the onion juice into the egg for a little extra flavor and saute until translucent because neither my kids nor husband like bigger pieces of onion.

It's the same reason why some things are called Pennsylvanian Dutch when they are actually German.
I agree that I disagree with people who say that you can't ever have too much cheese. You really can. Gasp, you can have too much bacon too. I've made those mistakes and more while trying to learn to cook. It's why my family has a truism, hot sauce covers a multitude of sins 😂. We have never had a lot of money so ruining something meant that we still had to eat it. Only twice have I made something truly inedible. One was my 1st attempt at cooking 'steak' for our first anniversary. The 2nd was later that year when I didn't know that some seasonings intensify the longer they are cooked. It was crock pot beef stew & black pepper. I tasted after I put everything together and couldn't taste the pepper at all and added much more. 😂 Those 2 things were so bad that my husband (Marine) couldn't handle 😂

I make frittatas all of the time for my Athlete kiddo and husband. They call it egg stuff lol we go crustless. Here's my base recipe for a 13 by 9 inch pan.
    Egg casserole aka: “egg stuff”
    12 eggs
    One 16oz breakfast sausage sage
    1 tbs Cavenders greek seasoning
    2 cups baby spinach
One bunch green onions about 1 cup chopped tops included
    One cup Feta cheese crumbled
One cup shredded cheddar or mozzarella
Two large cloves of garlic chopped
    Preheat oven to 350
Spray your glass pan with pam or olive oil
Cook sausage, onions and garlic in a skillet until meat is browned
Layer in the bottom of a 9x13 glass casserole dish
Whisk eggs feta and seasoning then pour over top
    Sprinkle with shredded cheddar
Bake on 350 for 20-30 min or until middle is no longer jiggly
Cut into squares and store in fridge.
This heats up really well and makes for a perfect on the go breakfast or a dinner with a green salad.
    Enjoy!!

You are so encouraging for us folks to cook from scratch for cost savings and simpler, more nutritious ingredients! Thanks! I am so blessed to have our own blueberries and our own maple syrup. Why oh why don't I make these yummy breakfasts/brunches every week?? Blessings, Marie

Happy Birthday, Miah! And Deutch Baby sounds a little like a U2 album title... 🤣 My Mom used to make frittata/quiche and call it "Egg Casserole" if it didn't have a crust and "Breakfast Pot Pie" if it had a crust. Love the fruit syrup sauces! Thanks for sharing, Jess!

Mmmm, asparagus quiche with feta or goat cheese is a simple favorite. Growing up we couldn't afford store bought syrup, so my mom caramelized sugar in a cast iron skillet then added water and maple extract. It was better than store-bought, and we got to smell the syrup cooking before we ate.

Hi Jess and Happy Birthday Jeremiah! This took me back to Saturday morning breakfasts with my Dad and his sisters. My Aunt always made Dutch Babies and we are of German descent.

In Minnesota, if you skip the crust, use hashbrowns on the bottom with the same type of filling in a 9x13 pan, its called an eggbake.😊

Our family immigrated from Germany in the mid 1700’s to Southeastern Pennsylvania where all the German descent were called Pennsylvania Dutch. Many German dishes are referred to as Pennsylvania Dutch.

Lately I like pizza quiche. I sauté mushrooms and onions and cut pepperoni into slices and use that as my filling. Then I cook it, when it’s almost finished I take it out and spoon some tomato sauce on top and put cheese on that and put it back in the oven to finish. Sooo good

Hi Jess, Thank you for this video that inspired me to get up this morning early and make a breakfast quiche and Dutch baby. I never made them before and they turned out so yummy. Also, I’m Pennsylvania Dutch and think the Dutch Baby Pancake is Pennsylvania Dutch.

I do quiche Loraine brunch, a family tradition Christmas morning. It’s so easy, forgiving and amazing! I add ground pork and sour cream etc. then but rest of the year, it’s whatever we have. Thanks for the video! ✌🏻🙏🏼❤️

I think your links for the syrups both go to the berry syrup.
Loving these videos of simple base recipes! Have made your biscuit recipe many times and wassail punch and hot chocolate this season. Looking forward to trying more!

Hi Jess. I have found that down home cooking is basicly using what you have, using your imagination and being thankful for what you have been given.

I have heard this style of pancake called anything from Dutch baby, German pancake or Pannekoeken. Years ago we even had a restaurant in town that would make your pancake and come running out of the kitchen yelling “pannekoeken “ so they could get it to your table before it would deflate. 😀

I cut up carrots for tiny little sweet and savory bites into small pieces and pre-cook them, then add them to my quiche. We also like mushrooms, sausage, garlic, spinach and zucchini pieces.

From Ontario Canada and I've never heard of putting anything but maple syrup on my pancakes. Today before watching this video I made a brown sugar cinnamon simple syrup for my espresso type drinks and thought if I ever am out of maple syrup this would go great on pancakes. Then this video happens lol. Timing is a funny thing

Happy birthday Jeremiah, use to suck having a birthday at this time of year as a kid 😂, I'm on the 27. I just made a frittata today (on anti-inflammatory diet) made it with a can of sockeye salmon, mushrooms, kale and my homemade dairy free meltable cheese and cashew base cream. Yum 😋

Hi Jess, german pancakes in my understanding (and the way i cook them) are without butter. Only milk, flour, eggs, salt and baking powder. And they are very think baked. Greetings from Berlin, Germany. Nadine ❤
