I am Japanese living in Japan. This chef is not Japanese. A majority Japanese chef will carefully handle the food. The Japanse don't like flashy too performance,such as compromising the taste. You have visited Japan and then expect to eat authentic Japanese cuisine. I'm sure I think you remember impressed by the delicacy of Japanese cuisine.
Honestly the way the camera guy interacted with the chef made me uncomfortable. You're supposed to enjoy the show, not try to superimpose yourself into it. I was cringing and you could tell the chef was uncomfortable.
