Ok so I did something *very* similar. Didn’t have the seasoning for the rice. Same cukes, I added garlic. I used chicken, cooked in sesame oil with some garlic, ginger and Chinese 5 spice Used kimchi instead of the pickled onions Added the green onions too!, still used soy, sriracha, kewpie and avocado? Diced like you did 😂😂 And I didn’t use seaweed. That’s just a flavour I can’t seem to get into.

NGL - it smells rancid, but in small quantities it really punches up the flavor. Also they sell onigiri 🍙 molds on Amazon for cheap - a quick way to make little sushi bites on the go like sandwiches

you brought the bougie with the zojirushi!! 🍚 your way is the way i make mine. It’s not Japanese, but i do add gochugaru and some sesame oil to the cukes. You need to try the s&b brand umami crunchy garlic with chili oil, it delish mixed in with the rice! Love your touch with the pickled onions!
