- Know how to prepare tasty Mangalore Udupi Style Palya that goes well with Chapathi or Rice. Narrated in Kannada with English subtitles

Ingredients:
Tender Okra/Ladies Finger/Bendekai - 1/2 Kg
Oil - 2 Tbsp
Mustard Seeds - 1 tsp
Urad Dal - 1 & 1/2 tsp
Curry Leaves - 8-10
Hing/Asafoetida - 2-3 pinches
Turmeric Powder - 1 tsp
Salt
Jaggery - 1 tsp
Coriander Leaves - 1 tsp
Masala Ingredients:
Grated Coconut - 1 Cup
Mustard Seeds - 1 tsp
Cumin Seeds - 1 tsp
Byadagi Red Chillies - 3-4
Method:
1. Wash 1/2 Kg Okra and wipe it with a cloth. Trim off both ends. Cut them into small pieces. Keep aside.
2. Add 1 Cup grated Coconut to a mixer jar. Add 1 tsp Mustard Seeds. Add 1 tsp Cumin Seeds. Add 3-4 Bydagi Red Chillies. Grind without adding water to the mixture. The ground Masala should be coarse in texture. Keep aside.
3. Add 2 Tbsp Oil to a pan. Once Oil turns hot, add 1 tsp Mustard Seeds. Add 1 and 1/2 tsp Urad Dal/White Lentils.
4. Once Dal turns slightly golden in color, add 8-10 Curry Leaves. Add 2-3 pinches of Hing/Asafoetida.
5. Now add chopped Okra/Ladies Finger. Roast the Okra in medium flame. Add 1 tsp Turmeric Powder. Mix and roast the Okra. Roast the Okra/Ladies Finger in Oil without adding water to it. After roasting the Okra/Bendekayi, it will shrink
6. Add Salt as per taste. Add 1 tsp Jaggery and mix well. Now add the ground Masala and mix well.
7. After adding ground Masala, roast for 6-8 minutes. Roast the Palya or Sabji till the raw smell of Coconut disappears.
8. Finally, add 1 Tbsp Coriander Leaves and mix well.
This Bendekai Palya or Okra Sabji will be very tasty with hot Rice. Quality cooking wares that I love and recommend. Many of these I use every day in my kitchen and in the videos as well. Thank you.

Sorry to hear this. It is a favourite of mine and my family. It has a crunchy feel to it and the secret lies in roasting of the okra the right amount. One should not add water to it. It is a dry palya. The masala should be ground without adding water. Hope you get it right next time.
