  • Rajasthani Kanji Vada

It consists of two main components: Kanji, a tangy fermented drink made from mustard seeds, cumin seeds, black and some spices. Wada, which are fried lentil dumplings. The lentil dumplings are soaked in the tangy Kanji, which imparts a unique flavor to the dish. Kanji Wada is known for its refreshing taste and is often served as a snack or appetizer during celebrations. It offers a delightful combination of textures and flavors, making it a favorite among many.
    Ingredients
    For kanji -
    • Yellow mustard seeds - 1 tsp
    • Black mustard seeds - 1 tsp
    • Cumin seeds - 1 tsp
    • Red chili powder - ½ tsp
    • Turmeric powder - 1/4
    • Red chili powder - ½ tsp
    • Hing powder - 1/4 tsp
    • Black salt - ¼ tsp
    • Salt - as per taste
    • Charcoal - small piece
    • Garam masala - 1/8 tsp
    • Mustard oil - ¼ tsp
    • Water - 5 cup
    • Fresh coriander leaves - 1 tbsp
    • Boondi - 2 tbsp
    For vada
    • Moong dal - 1 cup
    • Urad dal - 1/4 cup
    • Green chili - 2
    • Ginger - small piece
    • Cumin seeds - ½ tsp
    • Turmeric powder - ¼ tsp
    • Red chili powder - ¼ tsp
    • Salt - as per taste
    • Water - ¼ cup
    • Oil - to fry
