⬇️⬇️English recipe follows⬇️⬇️ 電飯煲海南雞髀飯 材料: 急凍雞髀2隻 白米2膠嘜 香茅1支 薑1舊 蒜頭5粒 辣椒仔1隻 青檸或檸檬半個 青瓜仔1條 處理: 1. 青瓜仔,先放入雪櫃。 2. 預熱電飯煲。 3. 雞髀,清水解凍。 4. 雞髀解凍後,倒去水分,加入粗鹽1湯匙,乸5分鐘,去除雪味,腥味,及加入少許鹹味,加入老抽半湯匙增加顏色,撈勻。 5. 薑,去皮,清水洗乾淨。 6. 蒜頭,去皮,清水洗乾淨。 7. 香茅,拍鬆根部,打直1開2,再拍鬆,1開2,放碟上。 8. 蒜頭,切碎,放碟上。 9. 薑,刴碎,放碟上。 10. 雞髀,清水洗乾淨,擎乾水,廚紙索乾。 11. 切出少許雞皮及雞膏。 烹調: 1. 電飯煲已預熱。 2. 在煲內,加入雞皮,雞油及油1茶匙。 3. 在煲內,加入一半蒜蓉,攪勻,蓋好。 4. 白米,清水洗乾淨。 5. 蒜蓉已爆香,加入白米,炒香。 6. 加入糖1湯匙,提升雞油及蒜蓉香味。 7. 搾出薑汁在白米內。 8. 加入適量水分。 9. 放上香茅。 10. 放蒸架在米上面,放上雞髀,開始煮飯。 11. 飯,差不多煮好,焗多大約10分鐘。 12. 取出青瓜仔,洗乾淨,斜切片,放碟上。 13. 預備蒜蓉青檸汁: a. 蒜頭,切碎,放碗內。 b. 辣椒仔,切碎,放碗內。 c. 加入糖1湯匙。 d. 拍鬆檸檬,搾出檸檬汁。 e. 加入凍開水20毫升。 攪勻。 14. 預備甜豉油在小碟上。 15. 取出雞髀,裝好飯,放碟上。 16. 雞髀,切件,放碟上。 17. 完成,可享用。 Hainan chicken rice with rice cooker Ingredients: Frozen chicken legs 2 Nos. Ginger, get it peeled. Rinse with tap water. 6. Garlics, get them peeled. Rinse with tap water. 7. Lemongrass, beat its root well. Divide it into 2 shares vertically. Beat well again. Divide it into 2 shares. Put on plate. 8. Garlics, chop well. Put on the plate. 9. Ginger, chop well. Put on the plate. 10. Chicken legs, rinse with tap water. Drain. Dry with kitchen towels. 11. Cut out little skin and fat from the chicken legs. Steps: 1. The rice cooker has been heated up. 2. Put chicken skin, fat and 1 tsp of oil in the cooker. 3. Add in half of garlic sauce in the cooker, mix well. Cover it up. 4. Plain rice, rinse with tap water. 5. Garlic sauce has been fried well, add in rice. Fry well. 6. Add in 1 tbsp of sugar, to enrich the flavor of chicken fat anf garlic sauce. 7. Squeeze ginger juice on top of plain rice. 8. Add in appropriate amount of water. 9. Put lemongrass on top. 10. Put a steaming rack on top of rice. Put the chicken legs on the rack. Start cooking. 11. The rice, has been almost cooked well, leave it for about 10 minutes more. 12. Take out the cucumber, rinse it. Slantly slice. Put on plate. 13. Prepare garlics lime sauce: a. Garlics, chop well. Put in a bowl. b. Chili, chop well. Put in the bowl. c. Add in 1 tbsp of sugar. d. Beat the lemon well. Squeeze the juice. e. Add in 20ml of cold boiled-up water. Mix well. 14. Get ready for sweet soy sauce in a small plate. 15. Take out the chicken legs. Fill rice in a bowl. Put the rice in bowl on a plate. 16. Chicken legs, cut in pieces. Put on the plate. 17. Complete. Serve.
