It's been 6 years since I started cooking. The very first recipe I ever attempted was from Yotam Ottolenghi's Plenty cookbook: Green Pancakes with Lime Butter. I've always wanted to revisit this recipe and see what happens.

Recipe:
Lime Butter
8 tb unsalted butter - room temp
grated zest of lime
1 1/2 tb lime juice
1/4 tsp salt
1/2 tsp white pepper
1 tb chopped cilantro
1/2 garlic clove, finely chopped
1/4 tsp chilie flakes
Pancakes
1/2 lb (around 8 cups) spinach
3/4 cup self rising flour (1 cup flour, 1 1/4 tsp baking powder and pinch of salt)
1 tb baking powder
1 egg
4 tb butter
1/2 salt
1 tsp cumin
2/3 cup milk
6 green onions, finely chopped
2 green chilies, thinly sliced
1 egg whit
olive oil for frying
(micro greens, halloumi, and smoked fish ;)

while it's great to hear that you care about better mental health and is open about that, it is disappointing to hear you advertise for better help. from what I hear their "therapists" aren't necessarily certified (and can thus do more harm than good), not to mention they've been in hot water quite a few times, like there's been filed a class-action lawsuit against them earlier this year.
I'm excited for you getting sponsorships and all, but it's a good idea to vet them a bit better before accepting them

I love this channel!! Jamie, you remind me of my 18-year-old self. My parents had just split, and I was designated cook, with NO experience. I had an Amy Vanderbilt cookbook (sweetbreads? What are sweetbreads--and why would anyone want to eat brains??) and a 1950 Pennsylvania State Grange cookbook (recipes that were donated and not tested and none too reliable, either). I had no clue what I was doing. I did sponsor a personal shower for a classmate who was getting married (at 17 to a Brazilian national who abandoned her in Brazil at 27 with four children!) and baked a 4-tier wedding cake for the shower. One success, at least--for me, not her. My poor father ate the strangest meals that summer. I had no clue what spices worked with what meats and why. That was 1968--55 years ago. I did get better and more fearless over time, venturing into Italian and French cooking and, in my 60s, returning to my maternal grandmother's English recipes and my paternal grandmother's Lithuanian ones.
P. S. I own Julia's twin cookbooks, along with dozens of others, including "The Galloping Gourmet".
Old cookbooks are the best. I've seen next to everything. Even seal in a puff pastry crust, Elephant meat soup and everything in between. Hold onto old cookbooks, they're an awesome window into the past.
My 18 year old self and yours must have met! There were no cookbooks to be found in our house and my mother hated (still does and hasn’t cooked in 15+ years) cooking. Thank the lord I had other family members who cooked and helped me learn and the public library. 32 years later I can look in my fridge, what spices I have and can usually whip out something pretty good. But, WOW,those early years were ‘interesting’ to say the least.
One thing I learned fairly quickly was to use church and community cookbooks. They had ingredients I could find and tasted like something I knew. It built confidence without breaking the bank. Looking back I’m quite kind to my 18 year old self…I had to use a recipe to make egg salad! One only knows what they’ve been taught or seen. 😂
The funniest thing to me now is that my youngest is going to culinary school. My mother is absolutely baffled (proud but baffled).
I have Amy Vanderbilt's cookbook, her cooking for teenagers section has me doing a doubletake sometimes. Dig the Andy Warhol illustrations.
@tomlindsay4629 You must have a later, updated edition. My edition is from immediately past WWII. There is no teenaged section. The accompanying text is an etiquette book which includes an entire section on how to clean your house and even organize dresser drawers. c. 1949.
@regenabaine4949 Culinary sisterhood!! I have an Ursuline Convent cookbook from New Orleans. Wonderful recipes, but the ingredient list is decidedly fish and seafood far more plentiful in "Nawlins" than NE PA in the 1950s.
I LOOOve this cookbook. The fresh corn polenta with the eggplant stew-thing is to die for!
My wedding lunch was just a whole bunch of Ottolenghi recipes made in volume and served as a buffet. Still one of the best meals I ever had. Most came from Plenty, I especially loved the potato tarte tatin.

The Jerusalem Cookbook he did with Sami Tamimi is also amazing, especially the meatballs with braised shallots and figs. They are beautiful cookbooks and every recipe is fresh and delicious
His Aubergine with Black Garlic was my first successful working with eggplant, but man oh man that black garlic brought the dish home!

I have this cookbook but never made them. That’s on my order up to-do list. I’m a newbie fan. My first Jamie episode was at the beginning of July when I was about to make a Paris-Brest to celebrate the Tour de France. I found the Anti-chef video from four years ago. I liked watching this guy and then found newer videos. I’ve been watching almost daily since. Bowl me! 🙌🏼
Jamie, I found your channel a couple of years ago after watching other food youtubers. I myself am trying to get up the nerve to get on my own food journey. The growth you've shown in the last two years (let alone the last 6 with this video's evidence) is fantastic. You should be absolutely proud of yourself for what you've been able to accomplish in your home kitchen. We should all strive to have the courage to do what you're doing. I wish you all the best, and at least 6 more years of this kind of fantastic progress.
As I make the recipes I see in your videos and other UA-cam chefs, I find it takes 3-4 times doing it before I get it tasting 10/10. Give yourself credit for coming so far as a chef

great progress! I have yet to find a bad Ottolenghi recipe, and I have all his cookbooks and cook from them often.
I LOVE that that cookbook lies flat! How wonderful...so few do. (And the spatters are just reminders that you have used the cookbook!)
