My grandma was renown for her raspberry and blueberry pies. Anyway, she always said that the key to great blueberry pies is adding a tiny bit of lemon juice to the filling as it brought out the flavor of the blueberries.
My mother from Maine used low bush wild blueberries she would always put a dash of cinnamon mixed in with the flour and fresh lemon juice over the blueberries
Here's the recipe for a double crust 9" blueberry pie to use with the demo: 1 3/4 cups all purpose flour 3/4 tsp salt 3/4 cup chilled Crisco 4-5 tbsp ice water Blueberry filling: 5 cups fresh or frozen blueberries 3/4 cup sugar 1/4 cup all purpose flour Pinch of salt Butter to dot on top Bake at 450 for 15 mins then 350 for another 50-55 mins
+Cathy Adamson Thanks for the recipe. It looks delicious! I'm diabetic, but I bet that I could make a reduced carb version with Splenda. I usually do half Splenda and half sugar in my recipes as the sugar gets rid of the Splenda bitterness.
Jack, you are a true gentleman. Letting Cathy make the pie was great. It was nice seeing a real person make a dish with all of the little adjustments, (wrong mixing bowl, broken crust, too much sugar), just take it in stride. What a great video. I love blueberry pie and have never baked one. Well, now I will. Cathy has inspired me to do it more than any TV chef.
so little views....so little 'likes'....this is a winning crust recipy for any pie....and so i learn too,,,,,greatings from south africa from 2014 to date
Very cool to have someone cook in your kitchen and on your channel. Looks like a tasty dessert. Being Canadian myself, it was awesome that the Adamson's are from your neighbours to the north!
That moment at the end when jack tastes that pie, listen, there's something special about a pie handmade by a real woman, and every man knows it. There's nothing else like it
Absolutely my favorite pie next to strawberry rhubarb but i never get the flour per blueberry ratio consistently right. Heck I even liked sauerkraut pie after the initial shock.
will you hurry, lol. i have to run out and get those ingredients. but, im gonna add some vanilla ice cream while the pie is still warm. just love your website.
Still need to sit up? It’s rested there for an hour already! Lol she should have added cornstarch instead of flour to thicken it she made a mess and left lol
These guest cooks make me appreciate Jack so much more. Can’t hear a word they’re saying and they’re so unsure of themselves and timid and and full of uncomfortable silent pauses. They mumble and need to speak up and have some fun with Jack! It’s just cooking and we know the pie is gonna be good so you have nothing to lose. If you continue with the guests, you’re going to need to invest in some microphones for them so we can hear them.
