Hello Janet, I’m new to your channel. And I 100% agree with you that they are “wet”, I’ve tried 3 different versions. They are all good but have that wet, slippery texture. They do toast nicely into cubes for croutons or in soups. And yes I agree with the other comment, I score mine in 3 diagonal slices across the top. Janet, I love all of your recipes. Reviewing the original recipe, a couple tips. As another commenter said, use a wet pallet knife or ofset spatula to smooth the top of the dough when it's in the loaf pan. Lightly score the center so the bread rises evenly. Also, allow the bread to proof in a warm place for about 20 minutes as indicated in the original recipe. also, she proofed the yeast before adding it to the wet ingredients. Yeast won't proof to quite the state it would if you used real sugar, but allulose, or Swerve will work well here. You indicated 1-1/4 cup followed by another 1-1/3 cup boiling water. This is almost 3 cups of water for the recipe. Is this correct? I think this will be the next recipe I try. I hope this information helps you and other viewers. Keep cookin. Tiffany

I used to be quite the regular baker and can picture what butter, eggs flour and sugar do in the bowl. I'm still working on that in low carb land. She's come up with an all purpose flour blend that works in traditional nonketo recipes. I'm baking things I haven't in years thanks to this flour, and Swerve granular and Swerve brown that behave like real sugar. Your cheese danishes were amazing. I will add a teaspoon of xantham gum next time to cut down the crumbly texture from the coconut flour. Some lemon zest in the cream cheese filling would be divine. There's also keto focums here on youtube who does some amazing stuff. It's wonderful to be here at a time when keto baking has been figured out by several people in several different ways. I think I'll bake this bread for sandwich material for my husband and then your garlic bread recipe. Yep, tomorrow's baking day. Just made a low carb blueberry crumble, using Victoria's perfected keto flour and swerve brown sweetener.
@@freedomfighter7079 I wouldn't suggest making this bread in a bread machine. This a quick gluten free bread and bread machines are generally made for full cook traditional bread so the timing would be too long

Hi, I like how there is the option of xanthan gum. Psyllium husk powder or whole ground to half it's volume doesn't seem to work for me. Her recipes usually doesn't have this option, she just uses the ground psyllium husk from whole psyllium husk. Anyway, this looks promising! May try it later, thank you. Oh yes, do you think I can use bamboo fiber instead of oat fiber?
I've used oat fiber for a couple of years now and also lupine flour and love both. I haven't tried this particular recipe, but I would like to. Maybe this afternoon. And maybe your coconut flour bread too for comparison. Is this oat fiber bread crumbly? It looks like it might be from the photo of the unbuttered slice. Or would it be able to hold a sandwich together?
I use egg white powder to replace traditional egg whites. You can replace the powder with 7 traditional egg whites or aquafaba. If you do this you will need to omit 260 milliliters of the water

Thank you for this video. I made this bread and other keto bread recipes. In general, when psyllium husk is used the bread turns a bit moist.

Can you make this in bread machine? Is this recipe from Diedre’s site?

You're welcome. I have not tried bamboo fiber as a substitute for oat fiber but since they both are pure fiber I think it would work.

The best substitute for flax seed meal in this recipe is chia seed meal or almond meal

Have you ever considered to add coconut flour to this recipe, it would absorb some moisture?
I have not tried this with adding coconut flour but I think it would be too absorbent when mixed with oat fiber.
I have to finish up my bamboo fiber, and I wanna switch to oat fiber. Can I use bamboo in this recipe to use it up?

Yes you can use egg whites. Omit the egg white powder and the 260 ml of room temperature water. Then use 7 room temperature egg whites instead

No I didn't notice any inflammation but I don't eat more than 1 or 2 slices in a serving
