I am surprised you enjoy horror and gore films, because you seem super nice. Some might even call it adorable. The way you fanboy over Tyrion, Jon or Dany, hehe. The thing is you would probably be better served if you had a more cynical mindset. Almost all characters say one thing but mean other. GRRM is a huge cynic and his signature is passive-aggressive banter when it comes down to it. There are moments of heroism and beauty as well but they are far and few inbeetween. Other foreign religions from the continent Essos include the belief in "The Lord of Light" which is the religion of Melisandre that we see in this episode performing some sacrificial ritual, a religion of fire. And there are others you will encounter later on in the show that I will not spoil
Cersei says power is power not knowledge. And yet she doesnt kill littlefinger. Why? He is useful. Why? His knowledge and ability to sing the needed song. The mockingbird sigil.
Knowedge is definitely power, but I think the point is that what Littlefiger says goes both ways. Machiavellian manipulators can also forget that other forms of power besides information and money exist. This is simply an extension of the point made by Neds beheading, that all these carefully laid plans can be destroyed in an instant by someone exercising raw authority in the wrong way at the wrong time.
Some of the new characters introduced in this episode are my favorites...Kraster's daughter/wife Gilly and the Onion Knight, Ser Davos. Also, Milesandre has a huge role to play alongside Stannis and will prove most beneficial yet terrible...

I don't think the colour grading changed that much. King's Landing always had a warmer tone. The North still has the blue filter and/or colder pallette
Would you consider watching the histories and lore? It truly gives a lot of context to better understand and enjoy the show. It is not too late to start with the histories and lore for season 1
