Great recipe I made this today and my family loved it! I tweaked it a little bit since I don't have all the spices on hand I used salt, coriander, black pepper but no chillies since my little one can't eat that and I added one tea spoon of curry and it turned out amazing! Thank you for the recipe!

Thanks Chef! I made this using Greek yogurt, which gave the marinate a sort of clay-like consistency, and I added a Tbsp. or so of Sriracha because I couldn't find Thai chili paste. WOW!!! That's some spicy tandoori chicken! Spicy enough at first bite to let you know it's spicy, and yet in the right proportion to make you want much, much more. If you've got a kamado grill, I recommend using it and its ability to achieve a higher cooking temperature.

I change it up by smoking the chicken over wood at 275* instead of baking or grilling, I also add a small amount of paprika, but essentially this is the recipe I use. Thanks again !

White meat and dark meat have to do with the muscle movement.. White meat is from "fast twitch" muscles which means the muscles get used very little and is only when the flap their wings.. Dark meat is "slow twitch" which means the muscles do more work like walking around so there is more blood running through those muscles which is why the color is different. Dark meat with slow twitch always has more flavor and the rarely used fast twitch doesn't receive as much oxygen which is they the meat is a lighter color. Same with beef.. Tenderloin doesn't have as much flavor as other working muscles like flank steak (the diaphram) or sirloin. It is more tender because the muscles do less work but it doesn't have the beefiness taste as much as other working muscles. Thank you for the video chef !!

+nikhil dev Lol I am also 12 years old and I like to cook. Cooking with bones is better because the chicken cooks so that its not overcooked. That way, it would still squishy and crispy like it is supposed to be. You can use chicken breasts, but it has a very high chance of becoming dry.
top guy. if i have to add one thing.......when cooking halfway through in oven.....apply/brush a bit more of the marinade on to the chicken.....repeat another time after 10 mins ...makes it much more tasty ! Best wishes

This is the best tandoori chicken recipe ever! Much better than store bought masalas and concentrated pastes. Turns out great in the oven or air fryer. Make sure you use small chicken pieces so that cooking is even; use a 1 kg spring chicken for best results. For added flavor, you can use mustard oil or ghee in the recipe in lieu of a flavourless oil. Make sure your curd is very thick so that the marination sticks to the chicken. If it looks as delicious as yours and is heavenly to the pallet, I'll post a photo. One of the tutorials called for corn flour for additional crisp and I tried that method for a roasted chicken, it was incredible as it worked beautifully so, forgive me but I'll deviate a bit from yours. Srujan Sriadibhatla overnight marination is not required as long as you put lemon. With lemon and long marination may turn out to be bitter. Careful.

The trick used in Punjab is to us Mustard Seed Oil instead of the regular vegetable/canola oil. The taste is very different and authentic.

One of the tutorials called for corn flour for additional crisp and I tried that method for a roasted chicken, it was incredible as it worked beautifully so, forgive me but I'll deviate a bit from yours.
