I've also been enjoying your videos, and appreciate the effort you've put into making them. Bringing an old airhead back to life is a very satisfying experience, and your care and attention to detail really shines.
Just a couple of suggestions.
Before you tighten the pinch bolts on the front end, apply the brake and bounce the front forks up and down a few times. This allows the sliders to center on the front axle so that they are properly aligned.
Before you tighten the rear wheel, apply the rear brake so that the hub is centered on the brake shoes.
