hey, how do you quickly seat multiple parties that come in and not get overwhelmed? if multiple guests came over to me at the counter, i would freeze. has this ever happened to you and how do you get over it?
hey! oh gosh yes, during the beginning I would absolutely freeze but over time, with the practice of mental collection and composure, I learned to take it one step at a time. If many people come in at once which happens very evening around 7pm (peak dinner hour), I stick to the 'first come first serve' costumer service. Most people have common courtesy to wait and be patient until it's their turn to converse with the hosts, however not every costumer is understanding so you tell costumers what you can to prolong their patience which is usually 'not too long now, table will be ready in x minutes". And if you have a great team, tasks at hand will be less work for you so I tend to check people in at arrival and tell them to wait on the side for my colleague(s) to then escort them to the table, job done. 😊
