My Grandson is a chef at The Freighthouse restaurant in Paducah KY. They get these locally. They call them silverfish which is more pleasing to the Instead of saying flying carp.. He said they have a very good taste. And quite popular on the menu

He went through this elaborate set of directions or seasonings and steps, then placing the prepared carp on a board and putting it in the oven over low heat over night. Then he said the next day you take it out of the oven, on the board, throw away the carp and eat the board.😄😂
