    You said to mix one ounce of Star San with one gallon of water. That is incorrect. The directions on the bottle say to mix one ounce with FIVE gallons of water. Maybe it's a moot point, but that is some strong stuff. Be careful when reading and giving out directions. Thanks for the video and all the other info

    If you clean with alcohol, do not use a sprayer. Atomized alcohol can be easily ignited by static electricity, possibly causing bodily injury and fire or worse!

    Other than good/regular cleaning and sanitizing ... any recommendations to deal with fruit flies? Am probably going to setup a few traps (apple cider vinegar with a few drops of dish soap). Was curious what your preferred method is for dealing with them.

    Hi you mentioned, in this video that hydrogen peroxide removes sulfates. Do you have a video demonstrating how to do It?

    What if I used bleach in the glass carboy and rinsed it multiple times, then let it sit to dry? Doesn't bleach vapor off eventually?

    Thank you for this great info. I mixed a half of tsp sodium metabisulfite with 1 tsp citric acid to a quart of water. Just like what you've said. May I ask, is this an alternative to a "no rinse" sanitizer like Star San?

    I have an access to industrial grade (50%) Hydrogen Peroxide. Can that be used as a sanitizer after suitable dilution - say 0.1% ?. And yes, I am well versed in handling 50% H2O2.

      Most of the one step type cleaners that are basically oxi-clean will create peroxide when hydrated with water. You could use hydrogen peroxide also but would want to take the same precautions to prevent oxidation of the wine. Since it is a strong oxidizer and reacts readily with SO2, you will want to rinse very good before putting wine in whatever container you clean. An easy way to eliminate the free SO2 is with a few mL of 3% hydrogen peroxide... Which is normally the exact opposite of what you want to do.

    Starsan, i think its 1 oz per 5 gallon, but how long is it good for when mixed ? and does it ever expire ?

      I read that it is okay to reuse as long as the pH stays below 3.5 and it is not visible dirty or cloudy. I used to reuse mine pretty long but I have such a huge container of it that I don't think that I need to worry about running out in the next decade so I am a little less conservative with it anymore

    I've heard of some people using isopropyl alcohol to sanitize equipment. I bought a spray bottle of it (91%) just to sanitize spoons to stir my must while I'm in primary fermentation. Of course, I wait for it to dry before the spoon makes contact with my must. But should I worry about it contaminating my wine?

      I wouldn't worry about it as long as you let it evaporate. You shouldn't have any contamination issues

    Hi I have been binge watching so many of your videos these last months because we are on the threshold of our long awaited first harvest of Cab Sauv grapes in S.E.Mass. My Brix are still wicked low I'm afraid and I am thinking that we may have to use a ton of sugar to help with that Low number. My question is if you have ever thought or heard of Bleached sugar Vs. Raw sugar having any effect on the outcome of the wine in relationship to what you speak of today. I can't wait to see your next videos that will help us with certain things we will able to do in the Vineyard to get better quality grapes. Thanks Scott

      It shouldn't make any difference. Both are sucrose which will be split into fructose and glucose in the high acid environment of the wine. In Europe they use a lot of beet sugar but it all breaks down to the same thing.

    Any suggestions to cleaning a glas carboy that is about 100 years old, and has spent last 40 years in a barn? Its 30 liter and full of hey and really tough grass

      Wow, maybe a pressure washer then some oxi clean or b-brite and a carboy brush. That is going to be a tough one!

    Does spraying the bung or Carboy opening with the SO2/acid blend add any odd off-putting smells or flavors to the wine? Asking because you indicated it smells like burnt matches.

      No, the smell is very volatile. You would have to put a huge amount of SO2 into the wine (>400ppm) to be able to detect the match smell and even at that it will oxidize away if left to air out. SO2 is your main defence against oxidation and the first thing that the oxygen will bind to. A little spray on the bung will help scavenge any oxygen in the headspace of your wine (which should stay topped up very close to the bung)

      You can but you would need a lot of it. You can use oxi clean or b-brite which contains sodium percarbonate. When added to water makes peroxide. Just be aware that hydrogen peroxide is a very strong oxidizer. So make sure to rinse thoroughly before adding any wine to a container or it can easily wipe out your sulfites and leave the wine vulnerable to oxidation.

    When you use the StarSan to sanitize a bottle, do you pour it out and reuse it or is it a once and done? Also do you use both StarSan and the sodium metabisuphite or one or the other?

      You don't need to rinse the starsan out, and you don't need to use any sulfites with it. You could always do a rinse with sulfites after if you want, just to prime the bottles with a little SO2 but the starsan alone should wipe out any microbes.

      I reuse Star San all the time as does a lot of the beer brewers I follow. Being no rinse is what makes it great. As long as you use it for sanitizing and not cleaning it’s definitely going to last for numerous applications.

      Once mixed does starsan have to be stored in a glass jug or can it be left in a spray bottle.

      You can soak with b-brite or oxy clean then use a carboy bottle brush. It will be pretty tough to get them out without the brush. I have tried using ball bearings and swirling them but at the end of the day a good long carboy brush can't be beat. They are about 30 inches long with a 90 degree bend on the bristled end.

      Thank you. We have neither b-brite nor oxy clean here in Ukraine. I guess oxy clean is probably hydrogen peroxide solution. Is it? If yes, what is the content of hydrogen peroxide there and how do you use it? I've been using sodium carbonate (soda) and cleaning sponge attached to a long stick for that purpose, but it is very unhandy.

      I think it is some mix of sodium percarbonate and sodium carbonate. The sodium percarbonate makes peroxide when added to water. Sounds like you have some serious stains! The carboy brishes have stiff bristles. Maybe you can use something more abrasive likely steel wool or a scouring pad on your stick.

      How about just using hydrogen peroxide as sanitizer? maybe thin it up with some water.. You can buy that stuff everywhere.. and it's alot cheaper than getting the fancy cleaning supplies.. Im just wondering.. is that a viable way to go or does it come with drawbacks?
