  • This is a documentary film about Yamada Suisan, the first company in Japan to ever succeed a purely organic and non-chemical unagi eel farming method.
    We constantly strive to provide customers with the most safe and pure taste of eels, which is why we initially tackled the challenge of non-chemical farming.
    After a series of trials and errors, the solution the eel farmers discovered for achieving organic farming was in fact very simple. It was to prevent the outbreak of sicknesses among the eels.
    For this reason, the eel farmers and their families reside, sleep and eat right beside the eel harvesting sites to ensure 24-hour supervision. The farmers’ professionalism allow them to infer the eels’ health conditions by detecting subtle changes in their eating and swimming habits, as well as the smell of the ponds.
    The eels are raised in the beautiful landscape of Shibushi, Kagoshima prefecture, by using the cleanest water drawn from approximately 70 meters below ground level. With passion and utmost professionalism, the specialty of the broiled eel “kabayaki” is made from slow-cooking the eels on hot charcoal, a technique that brings out the purity of their innate tastes.
    We want the word "kabayaki" and “unagi” to translate to the world and resonate with an international audience. We want to showcase Japanese pride and provide a taste only we can create with the non-chemical method. That is why we will always continue raising eels with immense care, determination and passion.
