That looks great! I do something similar with an oven fairly often. I should try adding beer instead of dry wine.
Hey Chef, thank you, thank you. Used the Parchment paper in jelly roll pan. Cooked the split chicken breast, onions, garlic and mushrooms at 425. Only took 30 minutes to cook, and veggies were nice and soft not burnt. Still had to clean pan a little bit not bad. Chicken was really juicy with lemon juice and bone broth. Thanks!

Hey Chef, watching Dr. Gundry on here, and he recommended sweet potatoes instead of other potatoes. One thing he said which I've never heard of. Peel and cook potatoes as usual in water on stove. But then he said you should let the potatoes cool completely in fridge, then cook them again anyway you like. Seems it gets rid of bad stuff from the potatoes. Sounds reasonable to me. I wanted to know what is the best way to cook the cut up potatoes in oven with onions, mushrooms and garlic to get them crispy? I'll use parchment paper, and olive oil. What do you recommend.
So yes sweet potatoes are a better alternative to regular potatoes. More nutrients to carb ratio. Is he suggesting cooling the potatoes in the water in the refrigerator and then cooking them? Make sure that if you do that they cool within a reasonable time frame or you can get really sick. Potatoes notoriously have spores in them from the ground. They are dormant unless they stay in the temperature danger zone for over a given time frame. Make sure that your potatoes are not covered and that they are no deeper than two inches in the pan. @@AwareHouseChef No he didn’t say to cool them in water. Want to make roasted potatoes not fry’s, but if better I’ll do fry’s
